1. Low-Carb Flank Steak Beef Fajitas
This Crockpot freezer meal is one of my family’s favorites! Who doesn’t love fajitas? Top with cheese & sour cream to add some wholesome fat!
Fill a freezer bag with:
- 2 lb. flank steak (or similar cut like a skirt steak)
- 1/2 of a white onion, sliced
- 1 bell pepper, sliced
- 1 – 14.5 oz. can diced tomatoes, undrained
- 3 cloves garlic, minced
- 1 jalapeño, seeded and chopped
- Spices: 1 Tablespoon cumin, 1 teaspoon chili powder, 1 teaspoon coriander, 1/2 teaspoon salt, 1/4 teaspoon pepper
- Optional: lettuce wraps, avocado, and lime juice
To Cook:
Dump the defrosted bag of ingredients in a slow cooker and cook on low for 8 hours until meat shreds easily. Drain liquid and serve on lettuce cups with avocado and lime juice, if desired. Serves 6.

2. Hearty Keto Vegetable Beef Stew
This Crockpot freezer meal makes the classic weekend beef stew possible on a weeknight!
Fill a freezer bag with:
- 2 lbs. beef stew meat
- 1/2 of a white onion, sliced
- 2 celery stalks, sliced
- 2 carrots, chopped (optional, will add 1.5g net carbs per serving)
- 4 cloves garlic, minced
- 12 oz. package sliced mushrooms (I used Bellinis)
- 14.5 oz. can diced tomatoes, undrained
- 2 Tablespoons tomato paste
- 2 Tablespoons balsamic vinegar
- 1 Tablespoon Worcestershire sauce or coconut aminos
- Spices: 1 teaspoon salt, 3/4 teaspoon pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon oregano
- 16 oz. beef broth (store in the pantry)
To Cook:
Dump defrosted contents in a slow cooker along with broth from the pantry and cook covered for 8 hours on low until meat is tender. Serves 6.

3. Low-Carb Buffalo Chicken Lettuce Wraps
I’m all in with this amazing keto Crockpot freezer meal. We never get tired of Buffalo chicken! Add diced avocado & bacon crumbles for extra fat.
Fill a freezer bag with:
- 3 large chicken breasts (about 2 lbs.)
- 1 cup Buffalo wing sauce (such as Frank’s)
- 1/2 of a white onion, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/2 cup shredded carrots (optional, will add 1g net carbs per serving)
- 16 oz. chicken broth (store in pantry)
- Optional: butter lettuce wraps, blue cheese crumbles
To Cook:
Dump defrosted contents of the bag in the slow cooker with chicken broth and cook on low for 7-8 hours. Shred, drain liquid, and serve on lettuce with blue cheese crumbles if desired. Serves 4.

4. Keto Carnitas “Nachos”
You won’t even miss chips with this Crockpot freezer meal for keto carnitas “nachos”. I love using mini peppers in place of tortilla chips!
Fill a freezer bag with:
- 2-pound pork loin roast or lean pork shoulder roast
- 1/2 of a white onion, sliced
- 4 garlic cloves, minced
- 2 Tablespoons canned chipotle peppers in Adobo Sauce
- 6 oz. chicken broth
- Spices: 1 Tablespoon cumin, 3/4 teaspoon salt, 1 teaspoon ground coriander, 1 teaspoon oregano
- Optional: mini bell peppers, shredded cheese, cilantro
To Cook:
Dump defrosted contents of the bag in a slow cooker and cook on low for 7-8 hours. If desired, serve on mini bell peppers cut in half. Place in oven and melt cheese on top. Garnish with cilantro. Serves 6.

5. Low-Carb Chicken Bacon Chowder
Did you say chowder? We saved the best for last by making you scroll through all the other Crockpot freezer meals to get to this one! This is so rich and creamy!
Fill a Freezer Bag with:
- 2-3 large chicken breasts (about 2 pounds)
- 12 ounces sliced mushrooms
- 1 leek, chopped
- 4 cloves garlic, minced
- 1 shallot, chopped
- 1- 8 oz. block of cream cheese
- 1 cup heavy cream
- Spices: 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon garlic powder, 1 teaspoon thyme, 1 teaspoon oregano
- 16 ounces [2 cups] chicken broth (store in the pantry)
- Optional: crumbled bacon, grated Parmesan cheese
To Cook: Dump defrosted contents of the bag in a slow cooker along with chicken broth and cook on low for 7-8 hours. Serve with crumbled cooked bacon and Parmesan cheese. Serves 8.

Tips for making the best Crockpot freezer meals:
- The green hands-free storage bag holders that you see pictured throughout the post are super handy and can be found on Amazon – they’re like an extra set of hands!
- I like to write the name of each meal, the date the meal was prepared, and cooking directions with a sharpie on the freezer bags. Then I start chopping produce and compiling each meal.
- Season to your liking – add and subtract the spices your family enjoys.
- To defrost a meal, simply move it to the fridge from the freezer the day before you plan to place it in the slow cooker.

Could these recipes we used as is in the instant pot? Time changed of course.
Yes, that should work! However, we do not have times for that as we haven’t tried it! Hope that helps!

If you use the slow cooker option the time should be the same. Making the fajitas tonight I’m using the optional glass lid however using the standard lo I’d with the vent open to allow presure to escape should work too.
I see on the shopping list carrots but didn’t see where they were used and only used 2 of the 4 onions. Have made the Stew and Chicken and Bacon Chowder and both were so good!
Looks like carrots are in the Buffalo chicken… at least in the picture it looks like carrots in the bag.
You’re right! Thanks for pointing that out! You can use the carrots, however we removed them from the recipe as they can add more carbs to the meal. We’ll be sure to get that updated!

Hi Nicole! We opted to leave the carrots out of the recipe when we posted as they can add carbs to the overall nutrition. However, if you would like to add them in, you could use a 1/2 cup of shredded carrots, though it will add 1g of carbs to the overall recipe. Hope this helps!

This is INCREDIBLE! Made these freezer meals and did 2 sets of each recipe to make it worth my while. It was so easy and they are SO DELICIOUS. Especially the chicken bacon chowder and beef stew. Hearty meals. I used low carb tortillas for the buffalo chicken, carnitas, and steak fajitas. Will keep these bookmarked so I can make them again. Please please make more of these!!

On the bacon chowder you can freeze the cream cheese and heavy cream in it ? Thanks!!
Yes! You can add those to your freezer bag as listed above. If you’d rather not freeze them with the other ingredients, you can always add them when adding all items to the slow cooker. Hoping that helps!
For the chicken bacon chowder, do you put frozen (uncooked chicken breasts) in the slow cooker? Then just shred after it’s all cooked?
You do put the frozen uncooked breasts in the slow cooker. It should shred on it’s own, but if not, you can use two forks to shred it.
The shopping list has 3 bell peppers, but the recipes only use 1 bell pepper, am I missing something?
