You won’t believe how simple yet over-the-top-bursting-with-flavor this Instant Pot Italian Beef Roast recipe can be (psst… it can be made in the Crock-Pot too!)
You MUST try this easy-to-make Instant Pot Italian Beef Roast! It remains the BEST roast I make on repeat. Better yet, this flavor-filled recipe also calls for just a few ingredients and requires very little prep time.

Initially I was hesitant to try a pot roast in the Instant Pot as I heard that they can come out kinda tough… but let me assure you, this roast was amazingly tender!
The fact that you can sear the meat right in the Instant Pot blows my mind! No wonder people still love this kitchen appliance.
Instant Pot Italian Beef Roast

This Italian Beef Roast is tender and so quick to make in the Instant Pot. The pepperoncini peppers add such great flavor!
Ingredients
- 3-4 pound beef chuck roast
- 2 tablespoons olive oil
- 16 oz jar sliced pepperoncini peppers
- ½ onion, thinly sliced
- 1 cup beef broth
- 2 garlic cloves, minced
- 1 tablespoon onion powder
- 1 tablespoon garlic salt
- 1 teaspoon salt
- 1 tablespoon oregano
- 1 teaspoon basil
- 1 tablespoon parsley
- 1 teaspoon pepper
Directions

Set Instant Pot to Sauté mode, and heat oil.

Brown meat on both sides for 5-6 minutes.

Add half jar of pepperoncini peppers, and 1/4 cup of the juice from the jar of peppers.

Add the onion, beef broth, garlic, and all the seasonings.

Close lid, turn valve to sealing, and set to 70 minutes on Manual (High).

After cook time is finished, let natural release for about 15 minutes, then release the rest of pressure, and shred roast.

Serve warm with remaining sliced pepperoncini peppers.
Additional Notes
Your cook time may vary a little with roast size in the Instant Pot. My roast was 3.2 pounds. I found 70 minutes was about average for a cook time, so I added a 15 minutes natural release with it. If you have a larger (5-6 pound) roast, plan for 80-90 minutes for super tender meat.

I love that this meal can be served in numerous ways!
My husband and I enjoyed our roast with cauliflower rice, while the kids had it served inside a sandwich. The peppers really made this recipe, too – what a great flavor! Leftovers have been amazing as well.
I cannot believe this only took just over an hour in the Instant Pot! I’ve never made a roast in less than 4 hours. You can also make this same roast in a slow cooker – just plan for more time.

it says 6 servings but how much is 1 serving in cup or wt?
It looks like that may actually depend on the weight of your roast. For the 3.2lb one made above, the serving size of 1/6 would be about .5 lb. Hoping that helps! ❤️
How would I do this in the crock pot?
Make sure to brown the roast first and then you can cook on high in a crockpot for 4 – 6 hours.
Please try 15-20 minutes for 5-9 lbs of beef or pork on high in your instapot. You can always cook again if you don’t like this texture. But you cannot uncook… I cooked a roast for 60 minutes and it was ruined! Like string and clumped together in my mouth which became like shoe leather.
Oh that is a bummer, I am sorry that happened! Wondering if 5-9 pounds of beef you have typed is correct? The recommended cook time we have tested is pretty on par with most recipes for a 3-4 pound beef roast. Wondering if you did a natural (longer) release as a fast one would make it tougher. Bottom line you may need to experiment with your machine as IP cooking can be a little trick with cook times. 🙂
Making it for the second time.i like my Italian beef tender like this recipe produced in my first time. Perfect for us. Fingers crossed the second is as good. I add Worchestershire sauce to all of my Italian beef recipes for a little more flavor. Otherwise I followed you recipe. Thanks for this great recipe.

Set mine for 70 min and I still can’t shred it! Is it ok to cook it longer? It was a bit heavy so I cut a bit off so it wasn’t too much meat to pepper ratio in the recipe and also appropriate for cook time.
The cook time may vary a little depending on roast size. The one Lina cooked was about 3.2 pounds. If you have a larger roast, you could try cooking a bit longer. Hoping this is helpful! ❤️
