I have an awesome taco chili recipe that actually made the best ever qvc cookbook! it has ground turkey or beef, with green chili’s and onions, one package of taco seasoning, one package of ranch dressing, one can of beans, etc. If anyone is interested, I will dig it out and send to Collin to post.

Here you go….
1 pound lean ground beef or turkey
1 onion, chopped
1 envelope taco seasoning mix
1 (16 ounce) can pinto beans
1 (16 ounce) can kidney beans
1 (16 ounce) can golden hominy
1 (17 ounce) can cream style corn
1 (14 ounce) can diced stewed tomatoes
1 (10 ounce) can diced tomatoes with chilies (optional)
1 envelope ranch-style dressing mix
Tortilla chips
1 cup grated Cheddar Monterey Jack cheese
Brown beef or turkey and chopped onion; drain. Add taco seasoning; mix thoroughly. Add, without draining, the cans of beans, hominy, corn and tomatoes. Stir in dry ranch dressing mix. Simmer over low heat until bubbly. Serve over tortilla chips and top with grated cheese. Serves 4-6. I also served it with warm cornbread instead of the chips and it was just as good!

Here is our Chili recipe…super easy, inexpensive, and we have been making it for 20 years. It gets rave reviews when we make it, and I hope you like it as much as we do.
Karen’s Chili
1 – 2 lbs. ground beef or turkey
1 onion, chopped
1 green pepper, chopped
46-oz. can Campbell’s tomato juice
30.5-oz. can Brook’s chili hot beans
16-oz. can light red kidney beans, undrained
16-oz. can dark red kidney beans, undrained
2 (14.5-oz.) cans diced tomatoes, undrained
1.25-oz. pkg. McCormick hot chili seasoning mix
3-4 T. cornstarch
1/4 c. cold water
In a large skillet, brown hamburger, onion and peppers; drain and add to a large pot. To the large pot add tomato juice, chili hot beans, both kidney beans, tomatoes and seasoning mix. In a separate bowl, mix cornstarch and water; stir into chili. Heat to a boil, then reduce to a simmer. Simmer for 1 hour before serving; stirring often.
