White Spinach and Chicken Keto Pizza

Ingredients

Fathead Pizza Dough:

  • 3/4 cup almond flour
  • 1 3/4 cup mozzarella cheese, grated
  • 2 tablespoons cream cheese
  • 1 egg
  • pinch of salt
  • 1/2 teaspoon Italian seasoning

For the Pizza:

  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 cup whipping cream
  • 1/4 teaspoon xanthan gum for thickening
  • salt & pepper to taste
  • pinch of nutmeg
  • 1 grilled chicken breast, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated mozzarella cheese
  • 1 cup fresh spinach, chopped

Directions

Preheat oven to 400 degrees F.

In a small saucepan on the stove, brown the butter and garlic for a couple minutes, while stirring over medium heat.

Whisk in cream and heat until almost boiling

Reduce heat and whisk in xanthan gum. Stir until thickened. Add salt, pepper, and nutmeg.

Pour cream sauce over the top of pizza crust.

Top pizza with chicken, spinach, and cheeses.

Bake in the oven at 400 degrees for 5-10 minutes until cheese is melted.

  • This recipe makes an 8-slice pizza as written, but you could also divide the dough and make smaller, personal-sized pizzas.

    I am curious… can these be made ahead and frozen? I see a lot of conflicting info on other sites about it so just wondering if anyone had tried with success?

      YES! Let the cooked crusts thaw in the fridge and then cook toppings on it for like 13-15 minutes at 425. That said, cheese can become crumbly in the freezer, so handle these with care!

    Just looking. You are using the Fat Head Pizza Dough, so you would cook your crust like that recipe? @ 425 for 12-14 min and then you would pour on the sauce and add your toppings, then turn the stove down to 400 for the 5-10 min?
