Ingredients
- 1/4 cup onion, diced
- 1/4 cup celery, diced
- 2 tablespoons butter
- 1 1/2 cups broccoli, cut into small pieces
- salt & pepper to taste
- 2 cups chicken broth
- 1/4 cup heavy whipping cream
- 1 cup cheddar cheese, shredded
- 1/2 teaspoon xanthan gum (optional to thicken)
Directions

In a large saucepan on the stove, sauté onions and celery with butter until translucent. Season with salt & pepper.

Add chopped broccoli, and sauté for a couple of minutes.

Pour in chicken broth and cook until broccoli is tender.

Turn off heat and stir in whipping cream. Stir in cheese to melt.

Whisk in xanthan gum to thicken the soup, if desired. Season with additional salt and pepper to taste.

Optional: Serve with a few slices of cooked bacon or ham if desired. Enjoy!

Could you freeze this soup?
Yes! It looks like that should work. You could freeze this flat, in freezer bags or in a freezer safe container once it has cooled. Then just be sure to thaw completely in the refrigerator. Hoping that helps!
This soup is delicious! I adapted it a bit to ingredients I had on hand, using green onions instead, and half of an 8 oz block of serious cheddar cheese that I grated myself. Added some diced grilled chicken breast, and this recipe made two hearty bowls of dinner for me! Thank you! Love your creamy coleslaw dressing,too. I am going to try the ranch recipe next.

I used a bit more cheese (4oz block cheddar) and my calculation came to 16.6 net carbs for the entire recipe…less than 6 per serving, and 314 calories. Winner!
