White Chocolate Cranberry Cookies Recipe
Are you in the holiday cookie baking and eating mode yet? Yep, we are too! Try these excellent white chocolate chip cranberry cookies! There’s something about the combo of dry tart cranberries and sweet white chocolate that is so fantastic. These are a huge hit in my family especially with my husband. He says they are “amazing”, and they happen to be very easy and quick to make! Recipe from Betty Crocker.
White Chocolate Chip Cranberry Cookies
yield: 36 SERVINGS
Excellent recipe for your next holiday party or family event! Pair this recipe with hot cocoa for a cozy sweet treat.
Ingredients
- 3/4 cup butter or margarine, softened
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla
- 1 teaspoon almond extract, if desired
- 1 egg
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white vanilla baking chips (6oz)
- 1 cup sweetened dried cranberries
Directions

Preheat oven to 350°F.

In large bowl, beat butter, brown sugar, granulated sugar, vanilla, almond extract and egg with electric mixer on medium speed until well mixed.

Stir in flour, baking soda and salt. Stir in baking chips and cranberries.

On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.

Bake 12 to 15 minutes or until light brown. Cool 2 to 3 minutes; remove from cookie sheet to cooling rack. Makes about 36 cookies.

One tip…I would spring for Ghirardelli white chocolate chips if you make this. Cheaper white chocolate baking chips really don’t taste that great…. I found out the hard way!
My mother in law makes these and they are SO yummy!
Here’s a spinoff to Lina’s yummy cookies. Melt white choc chips. Add fresh cranberries and whole pecans then stir and drop by spoonfuls onto foil or wax paper and let harden. They taste like candy but the fresh crisp bite of cranberry just does something. Try it, you’ll see.
I have stock dough recipes that I just change the add ins around and I made cran dark chocolate and almond oatmeal cookies they would have had white chocolate but I didnt realize I was out. Now I have to try it with white chocolate because these look yummy.

Oh sorry, to be more clear. It’s not cookies. It’s actually a candy with only 3 ingredients. Fresh cranberries, pecans, and melted white chocolate. Been making it for years, very easy and no fail. You can’t screw it up.

Love the combo! I soak my cranberries in some bourbon and add all of it into the mix instead of almond extract.
I make these cookies all the time! If you add a tablespoon of cornstarch into the dry ingredients, they fluff up and are so moist and delicious! Everyone who has tried them raves about how good they are! Thanks Lina!

I cheated! Ran out of time this afternoon, so I used a Betty Crocker sugar cookie mix, Added the white chocolate chips and the cranberries and they are SO good!!!
