Sliced Baked Potatoes Recipe
Here’s an easy and delicious twist to a plain baked potato – these were a huge dinner success at my house. You can customize the toppings to what each person in your family likes (great way to use up any leftover ham from the holidays!).
On this day, I made one with chopped ham and smoked gouda cheese and the other with fresh rosemary and thyme. They both were outstanding! I’m also a fan of roasting these with coconut oil…so yummy.
Sliced Baked Potatoes

cook time: 15 MINUTES
total time: 20 MINUTES
Baked potato with a twist! Make this delicious side dish that can be an appetizing crowd pleaser (multiple the ingredients by guest count). Adapted from the Instructables.
Ingredients
- 1 large potato (I used a Russet)
- 1 teaspoon coconut oil or olive oil
- Salt and pepper to taste
- Toppings of your choice like fresh herbs, cheese, bacon, ham, green onion etc.
Directions

Preheat the oven at 400 degrees.

Slice potatoes widthwise about 3/4 of the way down. Be careful not to slice all the way through the bottom.

Slather oil all over potato; add salt and pepper. Bake at 400 degrees for about 45 minutes.

Take out of the oven and place cheese in between slices or any of the topping(s) of your choosing and bake for another 15 minutes to melt.
I love how these turn out crispy around the edges and soft in the middle. Such a simple idea that’ll have you craving a baked potato! What kind of potatoes and toppings will you choose?

Little hint. Put a chopstick on each side of the potato. Stops you from cutting through it. 🙂

These are actually called Hasselback potatoes. These accordion-fanned spuds were named for the Stockholm restaurant that first served them (thank you Restaurant Hasselbacken!) Awesome! My friend lives in Miami and did these for a dinner party. Both adults and children enjoyed them. Since them I have done this with sweet potatoes and butter and even sweet potatoes and cinnamon apples and it works like a charm. Yum!

Ummm, peel it first??
Peeling it tends to make it not be as sturdy. Falls apart, I would peel and wrap in bacon 😛 or maybe semi-bread them.

I always tell my mother in law one of the best gifts she ever gave me was teaching the hubs to eat the skin on everything. “It has lots of nutrition”. I lucked out! 🙂

is it hard to stuff the cheese in between the cuts once they have been in the oven for 45 minutes? or are they not soft enough yet. trying to figure out how to do it without burning my fingers off! ive had this pinned on pinterest for awhile but it didn’t have instructions.
Just make sure it’s sliced thin! No it wasn’t hard. Maybe let cool a few minutes.

Bake for 45 min first then add cheese. Bake for another 10-15 check to see if melted.

For company, I would do a baked chicken with herbs and a green bean casserole.
You can cook at 3 in the oven and clean up should be a breeze.
I think a roasted chicken is easy and maybe a nice salad! Enjoy!

They are always pretty, look delicious, and easy and quick to make-with no exotic ingredients. My dh does is not usually a big fan of baked potatoes, but betting he will like these. He also appreciates it when I serve him a pretty plate, and tells me so. 🙂
I made these right after seeing the post, I love making the baked potatoes this way! My mom had cheese on hers and I had some sour cream on mine. I didn’t need to use any butter since the coconut oil and kosher salt gave it the perfect flavor. I probably could have skipped the sour cream as well, I’m just used to eating it that way. I had a leftover one and I popped it back in the oven to heat it up, I topped it with leftover chili. Thanks for the great idea!

Potatoes are even better when baked in the grill while cooking ribs for several hours.They are creamy and smokey and to die for.My family’s favorite way to eat them! I oil them and liberally salt and add to grill about 2 hrs from the end of cooking time.

I saw this recipe with steak seasoning and butter instead, which I made and loved. It came out delicious. (Our favorite that we’ve tried so far is the McCormick GrillMates steak seasoning, but the Weber isn’t bad either. Even when not hot, though, it was somewhat time-consuming trying to stuff the butter slices down into the potato. I think that next time I will melt the butter and pour over instead.)
