Homemade Egg Noodles for Soup

Ingredients

  • 2 cups all-purpose Flour
  • 3 egg yolks
  • 1 egg (with yolk)
  • 2 teaspoons salt
  • 1/4-1/2 cups water

Directions

Mix salt and flour in a large mixing bowl. Make a small well in the mixture with your fist and place eggs in well. Mix with your hands.

Add in about 1 teaspoon at a time of the water until you can knead a dough.

Separate dough in fourths. Roll out on a well floured surface to desired thickness and use a pizza cutter to cut noodle strips. (Note: I like thick noodles like the ones pictured, but you can go thinner based on your preference).

Cook noodles in boiling water for about 12 minutes or until cooked through and then drain. Add noodles to your favorite soup recipe!

These homemade egg noodles taste amazing in a variety of soups!

My family loves chicken noodle soup, and you shouldn’t wait until someone is sick to make a big batch of it! It’s easy to make, inexpensive, and it makes such a warm, comforting meal.

If you use leftover chopped chicken or shredded rotisserie chicken, it can be a really simple, satisfying meal to whip up any night of the week!

One ingredient that I believe makes a great soup is Herbes de Provence, which is a mixture of dried lavender, thyme, sage, and rosemary. It’s absolutely wonderful in a variety of poultry dishes, and I even use it on my turkey at Thanksgiving!

Below you’ll find my recipe for an easy chicken or turkey noodle soup that can serve as the perfect complement to this homemade egg noodle recipe.

Easy Chicken or Turkey Noodle Soup Recipe with Homemade Egg Noodles

Ingredients

  • cooked Egg Noodles from recipe above
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 6 cups or 1.5 quarts low sodium chicken broth, store-bought or homemade
  • 2 cups cooked shredded chicken or turkey
  • 1 tablespoon Herbes de Provence (or 1 teaspoon each dried sage, rosemary, and thyme)
    salt & pepper to taste

Directions: In a large pot, combine chicken broth, celery, carrots, and seasonings. Bring to a boil and let simmer for about 15 minutes or until veggies become soft. Add in chicken and noodles and let simmer for another 15 minutes until everything is hot and ready to serve. Makes about 5-7 servings.

    could you make these and then freeze them to cook later?

      Yes! I let them dry for a while, then store on airtight container in freezer. Just boil frozen noodles when making soup. I have also made the entire soup and freeze it that way.

    Very nice! I make pasta at home too. 4 cups King Arthur AP flour and 4 eggs and little bit salt. I use pasta machine to finish ( knead/ shape/cut) the job. That is it. but it is really good. Especially for lasagna. I will try it. Thank you for sharing!

    I love chicken noodle soup! A good tip is to sauté your veggies (with the side note of the smaller you cut them up, the quicker they cook. For those days you’re in a hurry.) in a pan and then make the soup. It gives it that all day cooking deep rich flavor, but a fraction of the time. This is particularly useful if using the rotisserie option.

      My friend taught me this tip now I do this as well and I agree sautéing veggies first makes a richer tasting soup!!

    Looks great!!! I always make my own chicken stock and freeze in zip lock bags for easy use later. I save the greens from celery, random carrots and left over fresh herbs and freeze them in one big bag. Later get some more fresh veggies, chicken and the frozen bag of scraps and make an awesome broth!!! Now i need to make my own noodles, thanks for the suggestion!!

    Thanks for the recipe! I’m glad to see else uses these at Thanksgiving. It’s a tradition that my grandma did and now my mom who last year taught me how to make these noodles as well to keep our Thanksgiving tradition alive. I’m originally from the Midwest and this was a norm for our Thanksgiving dinner but now that I live in the South I get odd looks when I mention it. Ha! Glad to see someone else has a similar tradition.

    I’ve never made homemade noodles, but want to try. So this might sound like a strange question, but before I boil the noodles, do I need to let them dry for awhile? My grandma (now deceased) used to make her own noodles, and I remember going over there and there’d be noodles everywhere drying lol

      I think it’s personal preference on that because some recipes do and some don’t. If your dough isn’t super sticky and they aren’t sticking together they will semi-dry pretty quick while you boil water, and fine to cook. If you plan on freezing I would dry longer so they don’t stick together while storing. Thanks!

On my list was to pick up some reames noodles which are my favorite. I couldn’t find any noodles, so I picked up some Amish noodles instead.     I forgot to add that I made mine thick like dumplings. My neighbor suffered a stroke a few weeks ago and we have been bringing him dinner every evening. He loved the chicken and dumplings too.

    when making these noodles instead of using water use chicken broth for a richer taste and add a little butter. they will be perfect

    I finally made these noodles for the very first time and they came out awesome! I rolled them out as thin as I could, I used the pizza cutter, and I refrigerated them uncooked to be used the next day. I used a little poultry seasoning in the dough. They expanded a ton when I boiled them (I added some chicken stock to the water) . I served them with my chicken marsala and my whole family raved. Lina, thanks to you, we will never eat store-bought noodles again! Thank you, thank you, thank you!!!

    Hi. Why do you precook the noodles then add them to the soup? Why don’t you just make them and let them cook in the soup?
