Ingredients
- 16 mini cupcake liners
- 16 banana slices
- 3/4 cup dark chocolate chips
- 1/4 cup peanut butter
- 1 teaspoon coconut oil, divided

Place 16 mini cupcake liners on a parchment paper lined cookie sheet.

Melt chocolate chips in a microwave-safe dish with 1/2 teaspoon coconut oil for 30-second intervals stirring in between until fully melted and smooth.

In a separate dish, melt 1/2 teaspoon of coconut oil and stir in peanut butter, set aside. Place a teaspoon of chocolate mixture on the bottom of each liner, followed by a banana slice.

Add a teaspoon of peanut butter mixture on top of banana, and top each with remaining chocolate mixture. Place in freezer for an hour until set. Enjoy!
