I have had to stop eating gluten for almost a year and it’s been a bummer. I have missed really good cake and the gluten-free cakes I can buy cost so much! I was excited to see that ALDI has some new mixes. I couldn’t wait to try this Meyer Lemon one and it did not disappoint. It baked up beautifully golden brown and it is springy and light, not dense like lots of GF cakes. It has a really nice lemon flavor that isn’t overpowering. I topped this one with a simple homemade buttercream. It was even a treat for my gluten-loving family.
One important difference from other cake mixes is you will have to buy extra if making a double layer cake because it’s only enough for one layer or a small amount of cupcakes. I also keep the chocolate mix on hand at all times for perfect fudgy brownies (directions on the box). You don’t have to be a baker to make these either, they are as simple as a regular cake mix. You can easily add a swirl of caramel or peanut butter to it to make it more fancy. It’s a very versatile in that you can use it for cakes or brownies.

They are very good mixes. I have used them for so many birthdays and holidays and even the non-GF bunch enjoy the taste. Also price can’t be beat as usual with Aldi.

We use the chocolate brownie mix to make cookies – recipe is on the box. We add chocolate chips to the mix and then as soon as they come out of the oven we place an Andes mint on top, let it melt a little, and spread it around like icing. (It will harden as it cools.) My husband and kids ask for them all the time and they don’t have to eat gluten free!

These are delicious! I replaces the oil with melted butter equal amounts and used milk instead of water equal amounts. My sister who is a bit of a cake box snob had no clue it wasn’t homemade!

There is also key lime gf cake mix at my aldi. It was very good. I added an entire fresh lime (zest and juice) in place of the water. We all enjoyed it and my gf guest really appreciated it.

We just had one of these and I don’t usually eat GF so I’m not used to how things taste. I thought it was really dry and didn’t care for it. I’m sure you could add like a pudding mix or extra oil to make it less dry. The brownies taste good but are super sweet!
One thing that I have learned about GF baking is that if its slightly over baked it becomes dry. Not sure if that’s what happened with yours but I watch my GF baking a bit more closely than other cakes.
Is there a recipe to make cookies, dessert bars or anything else using the lime or lemon cake mixes as a base? I like the brownie mix with the cookie recipe. Since the lemon and lime cake mixes are seasonal, I buy several when I find them at Aldi and put them in the refrigerator so they will keep fresh and have a longer shelf life. Then I can enjoy a refreshing treat even in the middle of winter.
