- Have a nut allergy? Leave out the peanut butter and use sunflower seed butter or another nut butter alternative.

- Not into oatmeal chocolate chip bars? That’s okay! The mini chocolate chips are yummy yet optional. You could omit them or substitute in raisins, other dried fruits, or even nuts, if desired. This oatmeal breakfast bars recipe is very easy to change according to your taste.

Peanut Butter Chocolate Chip Oatmeal Bars

Baked oatmeal bars with chocolate chips, peanut butter, and banana that are soft like bread and so delicious for breakfast or as a snack!
Ingredients
- 1 cup rolled oats
- 1/4 cup all-purpose flour (or flour of choice)
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
- 2 eggs
- 1/4 cup honey
- 1 ripe banana, mashed
- 1/4 cup peanut butter
- 1/3 cup mini chocolate chips
Directions

Preheat oven to 350 degrees and line an 8x8 pan with parchment paper.

To a mixing bowl, combine the oats, flour, baking soda, baking powder, and salt. Mix well.

To the dry mixture bowl, add the coconut oil, vanilla extract, eggs, and honey, and peanut butter, and mashed banana. Mix batter using a spoon, and then fold in the chocolate chips.

Pour batter in the 8x8 pan and spread evenly. Place in the oven and bake for 25-30 minutes until the top is slightly browned and cooked through.

Let cool, and cut into 9 oatmeal squares. Enjoy!

Half of my kids are allergic to peanuts and tree nuts…the other half to sunflower seeds…I know! Crazy! Any thoughts on what a sub could be? I know they have a variety of plant butters now from Country Crock.??
You can try that or maybe just omit and sub with greek yogurt or applesauce.

I just made them and omitted the pb and didn’t replace it and they were still good. Maybe a bit more crumbly than they would have been but tasty.

Thanks for sharing your experience with no PB! We have a peanut allergy in our house and he won’t eat anything that smells like peanut butter. I might try adding applesauce instead.
I know there is a peanut butter substitute made out of yellow peas. Maybe that would work for you?

Of course. I would sub another cooking oil you enjoy baking with like vegetable oil, canola oil, etc.

Just made it (no bananas since I didn’t have any) I did add raisins and use peanut butter power instead of peanut butter and it turned out pretty good and filling.

Anyone else dairy free and try these without eggs?
I’m allergic to eggs, so I am trying them right now without eggs. I’m just using 4 bananas (but doubles the recipe) instead. I will let you know how they turn out!
They turned out great! I would increase the honey and peanut butter just a little bit next time, but otherwise they were a success without eggs just by increasing the banana.

This recipe is so easy to adapt too. Easy to make gluten free, egg free, dairy free! Plus so many variations. Add coconut, and mandarin oranges for a tropical feel. Raisins and cinnamon for an oatmeal raisins version. Omit pb when it doesn’t compliment your flavors. Just a fantastic, fun recipe!
