Brussels Sprouts Cake Pops are the Best Dessert!

White and milk chocolate dipped Brussels sprouts are my new favorite dessert vegetable and I know you’re gonna love these too. What could be better than a chocolate-dipped tender Brussels sprout to nosh on?!
Plus, I personally love that these are so much easier and healthier to make than actual homemade cake pops. This simple recipe only requires a few easy ingredients and there’s no rolling cake into a ball, or worrying if they’ll roll off the stick. If you love easy recipes, this is definitely one to try.
Tips for making the best Brussels Sprouts Cake Pops:
- Boiling the Brussels sprouts is an optional step, but tastes so much better in my opinion, plus having them a bit tender makes it much easier to place them on the cake pop sticks!
- Use candy melts! I actually tried melted white chocolate at first and it all came sliding right off sadly. The candy melts seemed to set up quickly and stayed on much better. I used a mix of chocolate and white chocolate candy melts and love the results!
- You’ll need a way for the Brussels sprout cake pops to stay upright, so I poked holes in a box to set the sticks in and it worked well. Floral foam is also a great option. They will need a little time to set up in the fridge, so make sure to pre-plan for that.

Clean and trim Brussels sprouts. Boil them on the stove until tender for about 5 minutes. Drain and let dry & cool.

Insert the cake pop stick into the stem of each Brussels sprout.

Place candy melts in a microwave-safe bowl and microwave for 15-second intervals until melted, stirring between each round.

Dip each Brussels sprout in the melted candy, and tap off the excess. Add the sprinkles. Place each one upright in a piece of floral form or poke holes in a box like I did to stand them up.

Refrigerate for at least an hour to set, and enjoy!
