Loaded Potato Salad Recipe

Loaded Potato Salad

This delicious loaded potato salad will be a hit at your next cookout! It's filled with flavor and potato goodness! Adapted from Taste of Home
Ingredients
- 2 pounds potatoes quartered (I used Klondike potatoes)
- 7 pieces of bacon, cooked and crumbled
- 1/2 cup sour cream
- 1/2 cup real mayonnaise
- 3 tablespoons Ranch dressing
- 1 tablespoon Dijon mustard
- 1/4 cup grated cheddar cheese
- 1/2 teaspoon minced garlic
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 3 green onions, chopped
Directions

Cook the bacon and set aside.

Bring a large saucepan of water to boil with potatoes. Reduce heat, cover, and let cook for 15 minutes or until potatoes are tender.

Drain potatoes, toss them with chopped bacon, and refrigerate until chilled.

Whisk together mayo, sour cream, garlic, mustard, ranch dressing, salt & pepper.

Toss to coat potatoes and then mix in onions and cheese. Makes about 8 servings.
Hip Tip: I’ve used different types of potatoes and it works well with goldens, reds, the fancy blue potato varieties, and also Russets. I’ve also used shredded Parmesan cheese for a different and equally great flavor.
I wasn’t initially a fan of potato salad until a friend made one like this a few years ago at a party. It was sooo good and had everyone asking for the recipe and this adapted version has become a family favorite! Enjoy! 🙂

Thanks! I was invited to a BBQ next Sunday to kick off the football season and was asked to bring potato salad. Why I got picked for that I’ll never know! My one attempt years ago was … mehhh…. My granny made the most amazing potato salad, but unfortunately left Earth with her family recipe in her head and I always regretted not getting her to write it down. I guess when you’re young, you think they’ll be here forever! But Lina to the rescue!! I think this will be a crowd pleaser!

Just wanted to come back and say WOW, this was great!! I made a practice run b/c like I said, potato salad isn’t my “thing”!! I didn’t have Dijon so I used regular yellow mustard. I made it Saturday night to eat with our ribs yesterday. I do remember my granny saying you need to let the flavors “merry” overnight. The only suggestion I got was from my dh. He said to smash the potatoes a bit. So I will double the recipe for Sunday and hope everyone enjoys it as much as we did! Thanks so much!!

Just bc something doesn’t “look good” doesn’t mean its unedible! As a novice cook, I’ve flopped on quite a few recipes and they’ve looked well, unappetizing, but they actually tasted pretty darn good!

I’ve been making a potato salad similar to this for about 20 years. I suggest using a medium size grate on the cheese (don’t use fine) for the salad. It holds up better and will actually give it a burst of cheese flavor every once in awhile.
Also, most potato salads taste better when the ingredients have been combined and sit in the fridge overnight.
Another suggestion, if you plan on letting this sit overnight, cook your bacon extra crispy. The consistency of the bacon holds up better.
I haven’t added ranch to my recipe because I like the flavor of the sour cream on a loaded baked potato.

Ranch is what I use in my tuna salad, because I have never “liked” mayo (by which I mean to the extent that if it comes on food I have to order at restaurants to leave it off). Although I do like sour cream, if a restaurant has a good house ranch, I get extra for the baked potato.

Well I would think that u could prob use: reduced fat or fat-free sour cream, Lite/reduced fat mayo, lite or fat-free ranch, 2% cheese, and turkey bacon. It won’t taste like the “real” stuff but I’m sure going to try it! Thanks Lina!!

Also plain Greek yogurt instead of sour cream.
The Fage 0% Greek Yogurt tastes exactly like regular sour cream. And I hate light sour cream. It is so thick and yummy.
Then don’t make it..simple enough.
It’s funny how so many have different ideas of healthy. I saw this recipe and thought wow I could totally tweak it a little and make it primal as I follow a nutrient dense paleo-type diet. I would love to try this with a soy and corn oil free homemade mayo with ranch style seasoning. I do include dairy from grass fed cows/goats/sheep as well as white flesh potatoes on the rare occasion because I tolerate those foods well. I recognize not everyone has the same view and I think the recipes shared here are more to inspire than to say everyone should be eating them exactly as they are written. You got some great suggestions to enjoy this in a way that you deem as healthy for yourself/family. Enjoy.

Might could add some chopped spinach to make it healthier or turkey bacon might work. However, I love to splurge occasionally and but try to eat healthier most of the time. Great job, Lina, it’s looks sooo good!

Silly question- do you cut up the potatoes before you cook them? And if you and your family hate sour cream, what do you recommend to replace that 1/2 cup? Mayo? Ranch? thanks!
