Vegetarian Pasta Fagioli (Meatless Monday Series)
If you’re a fan of this famous Olive Garden soup, take note of this yummy and flavorful meatless version. It’s a great way to feed a crowd on a budget and something you can compile and keep warm in a slow cooker. The combo of sautéed veggies, broth, pasta, beans, and diced tomatoes make for a filling and easy to throw together meal.
Vegetarian Pasta Fagioli Soup

Veggie filled fagioli soup that is perfect for your Meatless Monday meal.
Ingredients
- 2 – 11 oz packages meatless crumbles
- 3 pieces celery, chopped
- 2 carrots, chopped
- 1/2 onion, chopped
- 1 tablespoon olive oil
- 2 – 24 oz cans diced tomato
- 2 – 32 oz containers vegetarian broth
- 15 oz can red kidney beans, drained
- 15 oz can white kidney (cannelloni beans), drained
- 24 oz jar spaghetti sauce
- 8 oz dry elbow macaroni
- 1 teaspoon Tabasco sauce
- 2 teaspoons dried oregano
- 5 tablespoons fresh parsley, chopped (for garnish)
Directions

Heat your largest pot on the stove with olive oil.

Add onion, celery, and carrots and sauté for a few minutes.

Add meatless crumbles, combine, and heat for another few minutes.

Add tomatoes and let simmer for 10 minutes.

Drain & rinse beans. Add beans, spaghetti sauce, broth, Tabasco, oregano and pasta.

Let simmer for 45 minutes until veggies and pasta are tender.

Serve with fresh chopped parsley if desired. Makes about 10 servings.

This recipe makes over 6 quarts so be sure to use a large pot. I transferred some to my slow cooker to keep warm until dinner time and then froze the rest for later. You can also split the recipe in half for a smaller batch.

But normally meatless monday is for savings…that faux meat is EXPENSIVE
It would be about 4$ for 11oz. using the coupon. I think regular ground beef is almost 4$ right now? You could skip it and use more veggies.

If you sign up for the Beyond Meat emails, they send out monthly coupons, often $1 off or buy on get one free coupons. If you combine with manufacturers or Whole Foods coupons, you can usually get these at ~$2 per bag.

Where would I find that meatless crumble. I have never heard of it. I shop at Kroger. Would they sell it?
I found some at whole foods. Their website has other locations
Kroger doesn’t sell it. You can find Morning Star though, it’s in the regular freezer section. Beyond Meat is frozen too, but at Whole Foods, Sprouts.
Look in the freezer section with the Morning Star products there is also a Gardein brand that Kroger carries and sometimes you can find Bocca or Quorn, they are all good.
You can try Target too in the freezer case. It’s with Morningstar Farms & Gardein products.
There are cheaper alternatives to meatless “meat” but just put in beans instead or make your own meatless crumbles they’re pretty easy actually and much more economical. Thank you so much for these vegetarian meals, so appreciated!!!

Yum! Loving the meatless monday ideas. This meal can be made as is or changed up to meet anyone’s needs. When you think about what a large amount of soup it is then the meatless meat seems reasonably priced. Sometimes I just put half of whatever the recipe calls for of meat just so I feel like I’m getting some meat flavor and that saves me $ too.
Yes this was seriously like 3-4 meals for us! Huge. 🙂 I stored in ziploc freezer bags to save room in freezer

Eliminate jarred pasta sauce and add a large can of crushed tomatoes with fresh basil, oregano, minced garlic and a splash of red wine and salt. It is so much more flavorful. You can use garbanzo beans, zucchini and kale instead of meatless crumbles.
I am vegan and always have TVP (textured vegetable protein) in the cabinet. It is a soy product but i usually use it when i have non-vegans over for dinner! You can usually get it in the bulk section of grocery store so you save money there by only grabbing what you need. Its dried so you have to reconstitute it. Sometimes I use water or veggie broth. Afterwards it looks just like those crumbles without the caramel coloring! And no one can tell the difference which is the best part! HTH for an alternative.

I made a similar recipe tonight. I purée the canned beans since my kids don’t like chunks. It makes the soup nice and thick.
