Homemade Baked Potato Soup

All the flavors of a yummy baked potato in a comforting and simple to make soup.
Ingredients
- 2.5 pounds potatoes, peeled & cubed
- 1/2 onion, chopped
- 1 teaspoon minced garlic
- 3 cups chicken broth
- 3 tablespoons butter
- 1/4 cup sour cream
- 2 cups shredded cheese
- 1 cup milk (or more depending on preferred thickness)
- Salt & Pepper to taste
- Any toppings such as bacon bits, scallions, shredded cheese, or sour cream
Directions

Place potatoes, onion, garlic and chicken broth inside Instant Pot.

Secure lid and set to Manual (High)Β Β setting for 10 minutes.

Once finished, turn the valve from sealing to venting toΒ QuickΒ ReleaseΒ the pressure.

Use a potato masher to mash potatoes and mix in butter, sour cream, shredded cheese, and milk.

If desired, use a hand mixer or hand immersion blender to puree and blend together.

Add salt & pepper to taste. Serve with any additional baked potato toppings as desired such as bacon bits, chives, etc.

My family ate every last drop. It really does have great flavor and is a super comforting homemade meal! Plus, you can’t go wrong preparing it in the Instant Pot for convenience!
Tip: If you’d like to make this soup in a slow cooker instead, try cooking potatoes, onion, garlic, and broth on LOW for about 5-6 hours, then adding the rest of the ingredients and cooking for another 30 minutes.

Thanks for the recipe. I’m getting ready to buy one. Do you have the 6 quart pot? Maybe other can chime in, I can’t decide between 6 or 8.I have 4 in my family.
Yes I have a 6 ~
We’re a family of 4 and the 6 qt. is plenty big. I cook in bulk quite often and it’s never been too small. I make whole chickens in it all the time, too. Also it’s much easier to find parts and accessories for the 6 qt. vs. the 8 qt. Hope that helps!

We are a family of 3 adults…4 from time to time. So I am wondering if the 5qt is large enough for a meal…and cooking a whole chicken. There is very little room in the counters so 2 pots would not be a good solution.

I just cooked a 4.7 lb chicken in the 6 qt IP and had plenty of room. It easily fed four of us too. I also did two racks of ribs cooked in it and that fed I think 6-7 of us too.

Thank you. This tasted pretty good. I added red pepper flakes and some starch/water to try and thicken it. I think next time Iβll use whipping cream to make it thicker or the day before.
I am going to make it in my crockpot. Thanks for sharing. I have crockpots and my mothers pressure cooker and use them all the time. Don’t have those new fangled pots though. Can’t teach an old dog new tricks I guess.
