Doesn’t your body recognize any sweetener as sugar, even substitutes? This is what I hear about splenda type substitutes all the time , it doesn’t lower the glycemic index of soda even if it is a diet version.

New to Keto. I’ve been spending a lot of time researching everything. But I’m wondering about personal preferences. Which sweeteners do people prefer? Erythritol, stevia, monk fruit, combinations? I’m mainly interested in baking and dessert sweeteners. I don’t use sugar in my tea or coffee. Has anyone had issues with side effects? Thoughts/Comments?
Nolee- so far I have steered clear of sugar substitutes. I did buy swerve (granulated and powdered) to give a few baked items a try but I haven’t used them yet-no time lately! Yesterday I tried a probiotic vitamin drink that I found at Aldi and once I took one sip, I knew it had Stevia leaf extract in it. Sure enough it did! I find Stevia to have a very strong aftertaste and I’m not a big fan. SO, all that said, my advice is to find what you like and stick with that but give the different sweeteners a try. I know BIg Man’s World (lots of paleo/keto/vegan/GF treats) uses a variety of different sweeteners depending on what he’s making. Enjoy the fun of the experimentation process!
I use a blend of about 2 parts Erythritol, to 1 part Xylitol, and 1/8 part pure stevia powder. Each sweetener has its own different sweetness profile and slight aftertaste, when combined I think they taste the closest to sugar. Swerve brand is essentially Erythritol. These sweeteners are derived from natural sources such as birch, corn, sugar cane, and the stevia plant. I have found them to be the healthiest sugar substitutes available at this time. I wish I liked Stevia, but the aftertaste is terrible to me. I prefer Erythritol and monk fruit mix (Lankato), but it is the priciest. I only get it when it goes on sale. I usually just go with erythritol. I pick the cheapest brand on Amazon at the time . This is a great price! It does not mess up my guts like other sugar alcohols (sorry if that was TMI) and tastes the closest to sugar without aftertaste. I bake with it and put it in my coffee. I grind it in a secondary coffee grinder to make it realy powdery for baking. It does not dissolve in fat very well, so this way my fat bombs or baked goods do not feel grainy. It dissolves in my coffee just fine.
powdered stevia is my fave! xylitol tastes fine but I get a weird headache-is-coming-but-never-does feeling when I have it; plus its a bit higher on GI scale.
I don’t care for the aftertaste of stevia but I tried Now Foods brand “Stevia Glycerite” and its a game changer! I add 4 drops(its a thick liquid) to a large glass of unsweetened almond milk and its fantastic. 4 drops! its crazy. a small bottle was $4.75 at my local bulk foods store and lasts about a year! great for lots of other things too, I haven’t tried baking with it yet but a lot of maria emmerich’s recipes (keto author & blogger) have it in them in combination with other sweeteners.

I use organic coconut sugar, which I find similar in taste to sugar and it also doesn’t spike my blood sugar or make me feel like crap after eating, like regular sugar does. It’s also inexpensive compared to Erythritol, which from I understand is the best substitute but I just can’t justify shelling out that much $ for it.
