Easy Almond Joy Brownies Using Boxed Mix
Try to eat just one of these brownies.
These Almond Joy Coconut Brownies might look like a million bucks and taste like they were just bought from a fancy bakery, but the truth is that the main ingredient is actually just boxed brownie mix.
I am a sucker for boxed mixes, and often use them as a base to create yummy and simple recipes. You can do so much when using a boxed brownie mix, plus I love that I usually end up saving both money and time.
These over-the-top delicious brownies are so simple to make thanks to boxed brownie mix and just 4 additional ingredients. This recipe makes a rich, fudgy brownie with an ooey-gooey shredded coconut center. You can sure taste the famous almond joy candy bar – just in brownie form. SO good.
HIP TIPS
- I recommend getting a “fudge brownie mix”. This variety seems to have the best turn out for me.
- Add a layer of parchment paper to pan before pouring the brownie mix to prevent sticking, and help with easy clean up.
- Don’t forget to garnish your brownie mix before baking in the oven. The toasted coconut adds another layer of amazingness to this easy dessert.

This recipe is for all you chocolate and coconut lovers out there!
Just a warning, it’s pretty much impossible to just eat one slice.
Are you a chocolate lover? You have to try our Best No-Bake S’mores Lasagna!
There’s a much simpler recipe: Use whatever brownie mix you like. Purchase Almond Joy snack size bars. Grease 9×13 pan and place opened snack size bars on the bottom of pan. Pour your brownie mix over top and bake. It’s delish!!
Do you grease your pan?
Great idea – after Halloween, they’ll be half price too!!
What is y’alls favorite boxed brownie mix? I love a good fudgy brownie. TIA!
I love the ghirardelli one, so delicious.
Thank you!
I agree, I’ve tried them all and agree with Jeanette, Ghirardelli is the beat.
Agree
I like Duncan Hines Milk Chocolates Brownies.
I usually put a layer of mix, a layer of Chocolate bars and another layer of the brownie mix.
I’ll also put some chocolate chips on top if I have them.
That sounds like a delicious chocolate overload!
Sounds yummy, thanks for sharing! I can’t wait to try. π
I’ve made these several times over the years and they are delicious. The only things I don’t like about them is the dark chocolate & almonds, (I’m not suppose to have nuts anyway due to gastroparesis), so YES, I’m one of those people who likes milk chocolate and throws the almonds away! So when I make these I omit the almonds and name them “MOUNDS JOY”! π
Love that idea! I donβt like almonds but love milk chocolate and coconut! Thank you.
Any ideas of what could be used in place of coconut… the family is not a big fan π€·π»ββοΈ
Cauliflower! Why not people use it for everything and say it that the same as the original recipes! π€£π€£π€£
I think that sounds like creativity to me! You could grate it so it’s the right consistency. Bet it works great-good idea!
Hmm, You could add your favorite candy, but then don’t do the cream center as that is the almond joy flavor. Hope that might help!
I made this recipe and the batter never cooked thru in the middle. I cooked it for 50 mins and the inside was runny. I don’t know what happened
So sorry about that. Maybe bake just a bit longer if you decide to try once more. Hoping that might help.
