Avocado Chicken Salad (Only 3 Ingredients)

Try this easy and healthy avocado chicken salad (shhh! – you actually replace mayo with creamy fresh ripe avocado)! Serve this 3-ingredient meal on bread, croissants, pita, lettuce leaves, or on top of additional sliced avocado.
Costco rotisserie chicken saves the day!
This idea occurred to me one day when I had surprise guests over and wanted to make a quick lunch. All I had in the fridge was a Costco rotisserie chicken and some ripe avocados on the counter. I managed to find some cilantro and then made some quick and simple chicken salad sandwiches! They were SO TASTY, and I think everyone was surprised to hear this chicken salad had just three main ingredients.
So today, I’m excited to share this delicious idea with you as a fun and easy meal to make for your family.
AVOCADO CHICKEN SALAD
Make this creamy avocado chicken salad for your quick lunch meal!
Ingredients
- 2 cups shredded chicken (I used rotisserie chicken)
- 1 large avocado, cored & chopped
- 1/4 cup cilantro, chopped
- Salt & pepper to taste
Directions

Add ingredients in a bowl.

Mash all ingredients with a fork until well combined.

I add chopped pickled jalapeño and jalapeño juice to make it creamy…👍🏼 yummy good!
I add lime juice, plain Greek yogurt, and halved grapes to mine.

I will buy a larger fresh whole chicken and cook it for dinner, than make chicken salad the next day with whatever chicken is left. My daughter keeps a close eye to make sure there is enough chicken left over for chicken salad. I like red grapes, toasted pecans, celery, mayo, any mustard I have on hand, pickle juice( or lemon juice), onion powder, garlic powder, sugar, and salt & pepper, and a dash of hot sauce… At this point I would say anything I have on hand that sounds good… I serve it with fresh spinach leaves and some sort of bread product…HTH
I also like to do this with egg salad too for a vegetarian-friendly option. Boiled eggs, avocado, Greek yogurt, smoked paprika, and S&P.
I cannot stand cilantro so I tried this today by substituting fresh basil… So so good!

I make this a lot for my 2 year old. Also do it with egg salad and tuna salad. Nice healthy addition.
If you want it to keep for a couple of days, add some lime juice on so the avocado won’t brown. 🙂
I add red bell pepper to mine. Sometimes celery and relish, depends on my mood 🙂

Have you heard of Just Mayo? I read good reviews about this product and I want to try it. My son has egg and nut allergies, so his sandwiches are dry, unless we have avocado on hand. Gotta get it on my next trip to Target.
I tried it, found it at the dollar tree. It’s good, I don’t hate mayo but prefer to not eat it, I had no guilt using this and tasted great!
We make avocado egg salad, no mayo at all.
Avocado works well. I mash the yolks & blend them with avocado, then add some s & p and sometimes fresh tarragon or pickle relish. Avocado provides great creamy texture, but no strong flavor.
