The idea for this recipe occurred to me one day when I had surprise guests over and wanted to make a quick lunch. All I had in the fridge was a Costco rotisserie chicken and some ripe avocados on the counter. I managed to find some cilantro and then put together these quick and simple chicken salad sandwiches!
The sandwiches were SO TASTY, and I think everyone was surprised to hear this chicken salad had just three main ingredients.
So today, I’m excited to share this delicious idea with you as a simple and delicious meal to make for your family.
Hip tips for making this 3-ingredient Avocado Chicken Salad:
- The secret for selecting the perfectly ripe avocado is that it will yield to firm gentle pressure when squeezed. If it feels super mushy to the touch, then it’s over-ripe.
- If you’re worried about the avocado browning, you could try mixing some fresh lime juice into your avocado chicken salad. Lime fits perfectly with the flavor profile of the other ingredients in this recipe, and its citric acid will help to slow the browning of the avocado.

- 2 cups shredded chicken (I used rotisserie chicken)
- 1 large avocado, cored & chopped
- 1/4 cup cilantro, chopped

I love to add sliced or slivered almonds to chicken or tuna salad. A friend of mine actually told me about using avocado with tuna salad and it is really good that way as well. Also suggested was a bit of olive oil and a flavored vinegar (I like garlic or red wine vinegar) mixed in.
Using avocado for egg salad is also very tasty. A great alternative to all that may!
Another mixture of ingredients for chicken salad I like is red grapes, sliced almonds, and red onion. Sounds weird but is very good.

this is amazing. I make it all the time, but I definitely put some chopped red onion in and squeeze lime juice on top. I eat sandwiches or use Tortilla chips to scoop it up. Everyone loves it!

I just made this for lunch and it was delicious! I used some plain Greek yogurt as a spread instead of mayo or dressing. Then added some banana pepper slices for crunch. As a side dish I chopped a mango and mixed it with a can of Del Monte zesty green chile diced tomatoes to make a great “home made” salsa.

I make this at least once a week. So yummy! I always add some fresh lime juice too. It tastes amazing & keeps the avocado from turning brown!
I liked it, but I feel like it needs flavor. I think what we are going to do next time is to prepare it like a guacamole-lime/lemon juice and onions.

Oh my is this great! I didn’t have cilantro and I wish I did because I love it, but I threw in scallions garlic powder and Greek yogurt. We had it on whole wheat wraps and I made sweet potato fries. Excellent! Kid friendly too! 😊
