Baked Ham & Egg Cups (Keto, Low Carb Breakfast On The Go Meal)

Here’s an easy make-ahead breakfast idea that will come in handy for those busy school/work mornings to get your day started! Bake these yummy ham and egg cups in a muffin tin for a handy breakfast on the go.
Baked Ham & Scrambled Egg Cups

Make these easy breakfast protein filled cups, perfect for a low carb recipe! Load up your baking muffin pan with eggs, ham and it's ready!
Ingredients
- 10 large eggs
- 12 slices of deli ham
- 1/2 cup cheddar cheese, shredded
- 1 and 1/2 cups diced veggies (I used bell peppers, red onion, and green onion)
- nonstick spray for muffin tin
Directions

Preheat the oven to 400 degrees. Spray muffin tin with nonstick spray. Place a piece of ham in bottom of each cup.

Add a little shredded cheese to each cup. Whisk eggs together and pour into each cup.

Chop and saute veggies for a few minutes with a small amount of olive oil and add salt & pepper to taste.

Add a little of the veggies to the top each cup.

Bake at 400 degrees for about 15 minutes until eggs are set. Makes 12 individual sized cups

We’ve tried paper muffin love need and they didn’t work well- lost a thick layer to the paper since it stuck so much. For egg dishes I much prefer using cooking spray right on the muffin pan.

These are yummy without ham too. Or replaced with bacon or sausage. Other veggie ideas are shredded spinach or zucchini.

I make different versions of this for my breakfasts at work. This week it is eggs , cheese, onions, jalapeño, and red peppers, with a little salt and pepper. They are super versatile. I’ve wrapped them in green chile too, instead of ham.

Anyone try this with egg white substitute from a carton?
I make these in different versions all the time and only use egg white from the carton and they turn out great! I make them with ham, turkey bacon or sausage.

And if you did it with bacon, would you just pre-cook the bacon (I would assume to pre-cook the bacon…_) and layer on the bottom in strips?

Yes for sure these can be frozen. Let them cool then store in a ziploc bag sealed. Then thaw when you’d like one or stick in microwave to reheat.
