Baked Tomato and Bacon English Muffins (Easy Breakfast Idea)

Wake up to perfectly baked English muffins topped with melted cheese, bacon and seasoned tomato, for a delicious and easy to make meal. This is such a fun idea to make for a crowd, as it’s simple and most everyone will love it!

In fact, last week at our Hip2Save team retreat, our wonderful friend Megan made a bunch of these English muffins for breakfast, and we ALL loved them so much! This is a yummy breakfast her mom and grandma used to make for her growing up, and she was nice enough to share the idea with us.
It all starts with BACON!
I love that these are really more of an easy idea, and not so much an actual in-depth recipe. The basic idea is to slightly toast an English muffin, top it with cooked bacon, cheese, and then a seasoned slice of tomato. Once these are all baked, the flavor and melted texture are so irresistible.
Megan’s mom actually told me the key to great flavor is to use garlic salt to season the thinly sliced tomato before baking. She recommends using this Lawry’s garlic salt with parsley.
Baked Tomato Bacon English Muffins

prep time: 25 MINUTES
cook time: 15 MINUTES
total time: 40 MINUTES
Melted cheese over crispy bacon, topped with a perfectly seasoned tomato.
Ingredients
- 6 English muffins
- 12 slices of bacon, cooked
- 12 slices of cheddar cheese
- 12 thin tomato slices
- garlic salt
Directions

Preheat oven to 350 degrees. Open English muffins on a sheet pan, and place them face up. Toast for 3-4 minutes. Remove from oven.

Place one piece of cooked bacon on each English muffin half. Break apart bacon in smaller pieces so it covers the entire circle.

Place one slice of cheddar cheese on top of the bacon, and break apart if there's a super large area to fill.

Place a thin slice of tomato on top of each. Season with garlic salt. Don't measure, just sprinkle on to taste.

Finally place back in the oven to melt cheese and tomato, about 5-10 minutes. I like my tomato a little more done, so I'd go closer to 10 minutes, but this is to preference. Remove from oven and serve.

We devoured our simple yet tasty tomato bacon English muffins in no time! I love the crispy bacon with the melted cheese combo. In fact, I was thinking these would make a perfect brunch type food for maybe Easter, or any special occasion when feeding a crowd. Just have them all prepped and throw in the oven before serving. Yum!
Serve up some cheesy eggs on the side, and this is such a tasty satisfying idea. I appreciate simple entertaining ideas like this so much! I had a leftover muffin the next day, and it was just as delish. 🙂

When making large amounts of bacon, I get the $1 foil pans from the store and bake a whole package of bacon at once in the oven. No standing over a hot stove, but my favorite part is the cleanup. I crumple the pan up (with the bacon grease still in it) and toss it. Just a tip!

Sooooo GOOD!!! I did add a little butter to the muffin and didn’t toast beforehand so it was a little softer. Amazing flavor!
