If you’re a fan of cheesecake, then you’ve just gotta try this creamy blueberry cheesecake dessert! It whips up in just a few minutes and is completely delicious and addicting. In fact, this is such a simple recipe that my 12-year-old makes it easily by herself!

I love simple no-bake desserts that you can easily make ahead of time. This one is perfect to prepare in a 9×13 casserole dish and take with you to any potluck or special occasion. It tastes like a creamy, fluffy cheesecake, and is something everyone will LOVE!
Tips for making the BEST blueberry cheesecake dessert:

- Don’t want to make a whole big dessert? I have cut this recipe in half and made it using a pie dish instead of a 9×13 baking dish, and it turned out fantastic! A pre-made pie crust would be even quicker.

- You can use cherry pie or strawberry filling if preferred. For a larger potluck, I have made one batch using blueberry filling, and one batch using cherry filling! Both versions are delicious.

- If whipped topping, like Cool Whip, isn’t your favorite, substitute with a few cups of homemade whipped cream instead!

Blueberry Cheesecake Dessert

Ingredients
For the Crust:
- 3 cups crushed graham cracker crumbs (or 2 sleeves of graham crackers, crushed)
- 3/4 cup butter, melted
- 1/3 cup granulated sugar
For the Filling:
- 2 - 8 oz. packages of cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 tablespoons lemon juice
- 8 oz. whipped topping, thawed
- 21 oz. can of blueberry pie filling
Directions

Preheat oven to 350 degrees.

Mix graham cracker crumbs, sugar, and melted butter. (Note: I started with crumbs, but if you need to crush whole crackers in a food processor, do that step first.)

Press the mixture evenly into the bottom of an ungreased 9"x13" pan. Bake for 10-11 minutes. Remove crust from the oven and let cool.

Meanwhile, use a hand mixer to mix together cream cheese, powdered sugar, vanilla extract, and lemon juice.

Fold in the whipped topping to the cream cheese mixture. Spread the cream cheese mixture evenly over the graham cracker crust.

Spread blueberry filling over the top. Chill in the fridge for a few hours or overnight. (I was impatient and placed mine in the freezer for an hour, and it worked fine!)

Cut into squares to serve. Store any leftovers in the fridge for up to a few days.

Anything to sub for the whipped topping? I typically don’t use that or whip cream.
You can make your own with heavy whipping cream
Nin you could use CocoWhip Dairy-Free Whipped Topping. I’ve never used it but it definitely looks like it’s worth trying.

So Delicious makes a great dairy free whipped topping if you can do coconut milk products. IMO, it is really delicious!

Low Sugar Healthier Version:
Crust:
3 cups ground pecans
3/4 cup butter or ghee
stevia or eurythritol, honey or 1/3 cup coconut sugar
Filling:
2 8-ounce package cream cheese or goat cheese
1 cup powdered eurythritol or small amount stevia
2 teaspoon vanilla extract
2 Tablespoon lemon juice
1 cup whipped cream or kefir cream
frozen blueberries cooked down with stevia

I make something similar, but use Nigella’s no-bake cheesecake recipe (the BEST no-bake version I’ve ever found) and Martha Stewart’s blueberry topping recipe. It’s always a hit!

You can use this same recipe to make individual mini-cheesecakes to bring to parties. It’s even easier because there is no baking of the crust. You literally use a Nilla wafer in the bottom of a cupcake liner. Make sure you use a cupcake tin so the mini-cheesecakes keep their shape while setting in the fridge. Top with any fruit topping you like. Cherry is my favorite! My mom used to make this to bring to parties when I was growing up. Now I make them. Always a hit!

Yes I think so, especially if you use whipped topping. I think it’d freeze great if covered well in freezer!

Can I use regular sugar instead on powdered sugar in the cheesecake mixture?
We’ve been making this for decades and it is super easy and yummy! In the summer, we substitute the canned blueberries for fresh picked.

I made the “cheesecake” so far. Just got it in the fridge. Going to make my blueberry sauce now. I am thinking of leaving the fruit mixture off and serving cherry pie filling and the blueberry sauce on the side. I can tell you right now though, for some reason I kept finding reasons to have to taste it 😉 WOW!

Make this all the time! I use just a sprinkle of brown sugar in the crust instead of white sugar and quite a bit less powdered sugar in the filling.
