Chicken Parmesan Bake (Easy One-Pan Meal!)

Easy Ingredients, Easier Process.
Any dinner that calls for a jar of marinara sauce, pasta, and cheese gets my attention because I know it’ll get my kids’ approval! I’ve been on a Rao’s pasta sauce kick lately, but use your favorite brand. You’ll want to make sure to get very thinly sliced chicken breasts or tenders so they’ll cook faster than a thicker chicken breast.
As for cheeses, I’m using mozzarella and Italian Pecorino Romano; however, Parmesan can be used. Collin loves Pecorino Romano cheese so I decided to try some because it pairs well with pasta (and I agree – it’s way YUMMY)!
Good news – there’s no prep work involved! Yep, the uncooked pasta, sauce, and chicken are baked together first. I thought the result could turn out watery, but then I was happy when the result was perfectly cooked pasta and sauce! The casserole then gets topped with cheese, then Italian seasoned panko crumbs, and placed back in the oven to melt.
Hip Tip: Spray the top of the panko crumbs with olive oil, so they’ll crisp up nicely. I used my olive oil pump sprayer.
Easy Chicken Parmesan Bake

A comforting meal with all the flavors of chicken parmesan, in an easy to build casserole!
Ingredients
- 1 lb. box rotini (spiral) pasta
- 3 cups water
- 24 oz. jar marinara sauce
- 1.25 pounds chicken tenders or thinly sliced breasts
- 1 and 1/2 teaspoons garlic powder
- salt & pepper to taste
- 1 and 1/4 cups Italian Seasoned Panko bread crumbs
- 1 and 1/2 cups mozzarella cheese, shredded
- 3/4 cups Pecorino Romano cheese or Parmesan, shredded
- olive oil spray
Directions

Pre-heat oven to 425 degrees. Spray a 9x13 casserole dish with non-stick spray.

Add uncooked pasta, water, and marinara sauce to a 9x13 casserole dish. Stir together, and add chicken to the top. Season with garlic powder, salt, and pepper. Cover with foil, and bake for 30-40 minutes until pasta is tender.

Remove foil, give dish a stir, and spread both cheeses over the top, followed by panko crumbs. Spray the top with olive oil. Place back in the oven for an additional ten minutes until cheese is melted and top is crisp.

Serve warm, and add more cheese and red pepper flakes for serving if desired- YUM!

Get excited for this result! The top layer has a nice crust of cheese, followed by the crumb topped chicken, and saucy noodles at the bottom. I mean, that’s perfection! Ha! 🙂 My family loved it – and it’s a lot of food, so there were leftovers for lunch the next day.
