5 Minute DIY Cookie Butter | Just Like The Popular Trader Joe’s Version!
Cookie butter fans will be happy to know this spread is easy to make at home using gingerbread cookies and a food processor.
What could be better than a spread made from cookies?!
If you haven’t experienced this Trader Joe’s must-have snack, it’s pretty darn delicious. You can spread cookie butter on a piece of warm toast, waffles, pancakes, ice cream, or even use it as dip for sliced apples or fruit. It has a consistency and texture similar to that of peanut butter but is instead made using crunchy cookie crumbs.
The Trader Joe’s version is made from crushed Speculoos cookies, a crunchy spiced shortbread. I opted to use gingersnap cookies for a similar flavor profile and it turned out delicious. I also tested a batch using Lorna Doone shortbread cookies which turned out creamy and tasty, too.
Tips for making the best DIY cookie butter:
- I used a food processor for crushing my cookies. A high-powered blender could do the trick as well.
- I used about 7 ounces of gingerbread cookies and just measured by estimating about half the bag. Just eyeball it according to the weight on your package. Crunchy cookies work the best for the idea.
- You can use another oil or even melted butter if you don’t want to use coconut oil.
- Cookie butter can be stored in a jar in the fridge for up to 5 days. Let is set out to come to room temperature to soften to spread.

What a fun and easy recipe idea!
My family has been enjoying this cookie butter very much. I think a banana cookie butter sandwich would taste amazing. 😋 You could create labels and make them as a thoughtful homemade gift in a jar too.
Here’s what my teammate Jenna had to say after making cookie butter:
“Just three easy steps and a few ingredients – this is amazing! Plus, you can customize with your own cookie choice and try different kinds! I went with Crunchy Iced Oatmeal Cookies. I can’t wait to make it again. The kids gave this two thumbs way up! You have got to try this!”
Make homemade Nutella in a similar way using this easy recipe!
I’ll save until I have a food processor. All I have is a blender right now. LOL. Thanks for the recipe. Never tried this before.
Is there a specific reason why it is only good for 5 days in the refrigerator?
It would probably last a bit longer – a bit of internet research says a week or so. Ours was gone before hand 🤣
Thanks.

Any subs for coconut oil?
Yep you can use melted butter or another preferred neutral tasting oil.
Thanks! Should have read your initial suggestions before the recipe. I’ll be making this for sure!
