Make Easter Bunny Cookies Using a Gingerbread Man Cookie Cutter!

Easter is right around the corner. Consider using a gingerbread man cookie cutter from Christmas to create yummy Easter bunny cookies from this tried and true cut-out sugar cookie dough. I recently spotted this fun idea on Instagram, and had to try out these cute Easter egg-hugging Easter bunnies myself to report back!
If you turn the gingerbread man shape upside down the legs become perfect bunny ears. What a fun and clever idea! Place a Cadbury candy egg in the middle and fold the arms up around the egg.
The result is a festive Easter bunny cookie that is hugging an egg! You can even go further and add face details with decorating icing.
Easter Bunny Hug Cookies

Cut-out sugar cookies decorated like an easter bunny using a gingerbread cookie cutter.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup confectioner’s sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- Cadbury Mini Eggs
- pink and white decorating icing
Directions

With an electric mixer or hand mixer, cream the butter, and sugar. Add the egg and blend well. Add extracts and blend.

Mix salt and flour together separately, then gradually add to the wet ingredients. Knead into a ball.

Cover dough and chill for about 2 hours (this step is a must!).

Preheat oven to 375 degrees. Prep a baking sheet pan with parchment paper.

Working with about 1/3 of the batch at a time, briefly knead the chilled dough and roll about 1/8 inch to 1/4 inch thick on a floured surface.

Use a 3-inch gingerbread cookie cutter to cut out shapes with the dough. Place the cookies on a cookie sheet. Add a mini egg candy in the middle of the cookie. Fold the arms around the egg and pinch the dough carefully.

Bake cookies on parchment paper-lined baking trays for about 12-14 minutes, or until the edges are slightly golden. Transfer cookies to a cooling rack and decorate them as desired with bunny face details.
Tips for baking easter bunny sugar cookies:
- I initially tried this idea using premade Pillsbury sugar cookie dough and most of my cookies spread too much. I even added more flour and froze my cutouts as suggested in this GoodHousekeeping.com article. I recommend sticking to a homemade recipe meant for cut-out sugar cookies.
- Don’t be worried about the Cadbury chocolate candies melting in the oven. Some of them lightly cracked, but all was well.
- Short on time? If you’re in a hurry, pop the dough in the freezer for 1 hour followed by 5 minutes to ever so slightly soften on your countertop, and it’ll work just as well! Just don’t skip chilling dough as that is the key to keeping cookies from spreading.
- Sugar cookie dough freezes well! You can make this recipe up to 3 months ahead of time, store it in a freezer bag, and then thaw it out when you want to bake cookies. You can also cover and store baked sugar cookies in the freezer too. When ready, take them out of the freezer to thaw and decorate.
