Make Dinner a Fiesta with this Easy Mexican Lasagna
Craving a slice of cheesy lasagna?
Try dishing up this tasty version featuring layers of corn tortillas, black beans, and cheese that’s bursting with Mexican inspired flavors! It uses easy to find ingredients and not too much effort in the kitchen, which is a definite win!
Such an easy dinner idea all will LOVE!
You can definitely add and subtract ingredients to fit your family’s taste. I used some pepper jack cheese for spice, but feel free to replace with all Mexican blend or cheddar cheese. You can also sub in a different variety of beans when you’re ready to mix up the corn and black bean mixture.

Lina, I can’t wait to try this. Your recipes are my favorite. I’m making your 1 pan steak and veggies recipe for the first time tonight. 🙂
Aw yay! That makes my day 😃 enjoy! ❤️
Oklahoma is kok
What? Is that an insult or compliment? If it’s an insult, that certainly doesn’t belong here. Lina is an amazing chef and her recipes are awesome!!
Going out on a limb here to say she probably meant.. Oklahoma is Aok. I’m fluent in typo. 😀
We call this enchilada casserole! Yummy!
Yum! Yes sounds good to me too 👍
This looks delicious I wish I had a plate of it now. I bet some Spanish rice would go beautifully layered also. Thanks for another awesome dinner recipe suggestion
Yes! That sounds fantastic. 👏
Thx so much ., you always seem to have recipes my family will love .!! keep up the good work and God bless
Aw thanks so much for your sweet comments always Babymair!
Could you substitute flour tortillas instead of the corn? My kids aren’t big fans of the corn but think they would like this if it were flour…
Yes absolutely! And I’ve even seen traditional lasagna noodles for a fun fusion. 👍
looks really good! going to try it tonight
Great! Thanks Susan! <3
I do a version of this in a pie plate or cake pan and call it enchilada pie! Yum😋
Oh YUM! Great idea
Are those crispy or soft corn tortillas?
Soft.
Bought the stuff to make this this weekend! Thanks!
Is this something that could be frozen?
Yes I think so! I freeze enchiladas and this is defiantly similar. 👍
We make this in a round pie dish and I call it Taco Lasagna! One of my favorites especially because it holds up so well and the leftovers are delicious! It’s a great addition to a meal rotation and you can premake then throw in the oven when you’re ready! I use this for meal trains often with rave reviews and recipe requests.
Yes I love this idea for meal trains! Great idea 👍
My husband and I made this tonight for dinner. It was so easy and delicious.
OH MY GOSH – I’m so happy you enjoyed 💕 Thanks for sharing!
