Easy Weeknight Chicken Stir-Fry

Check out this simple yet delicious Chicken Stir-Fry recipe that’ll have dinner on your table in no time. It has been one of Hip2Save’s most popular recipes since being featured in a previous post years ago.
Chicken stir-fry is such a delicious fragrant meal idea that’s also very adaptable to your family’s taste by using veggies they love. This is also perfect for using up odds and end veggies in the fridge!
I love how quick this meal comes together and how delicious the garlic and ginger flavors are! My kids request this often and it’s something you’ll likely have the ingredients for already.
Tip: Most of the time I’ll use a little sesame oil to brown chicken, and coconut oil is great too!
Weeknight Chicken Stir-Fry

Ingredients
- 1 pound boneless skinless raw chicken breast, cut into 1-inch pieces
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 2 teaspoons ginger, minced
- 1 cup chicken broth, divided
- 3 tablespoons less sodium soy sauce
- 2 teaspoons sugar
- 2 cups veggies (I used broccoli, sugar snap peas, & bell peppers)
- 2 teaspoons cornstarch
- Toasted sesame seeds (optional garnish)
- 4 servings rice, cooked
Directions

Heat oil over medium-high heat in a large skillet. Add chicken, garlic and ginger. Saute 5 to 6 minutes or until chicken is brown.

Add 3/4 cup of the broth, the soy sauce and sugar. Cover and cook over medium heat for 5 minutes, stirring twice. Add vegetables.

Cover and cook about 5 minutes, stirring occasionally, until chicken is no longer pink in center and veggies are crisp-tender.

Mix cornstarch with remaining 1/4 cup broth and then pour and stir into chicken mixture. Cook while stirring frequently, until sauce is thickened.

Serve on top of rice, and garnish with toasted sesame seeds if desired.

This looks delicious Lina. Most of the ingredients I have on hand. I store fresh ginger in a small jar in the fridge covered with leftover wine. Keeps it fresh for a long time. I also buy Trader Joe’s minced garlic in individual cubes in their freezer section. So handy for recipes!

I make a similar stir fry. I use carrots as well and Orange Marmalade. After growing the chicken I take out of the pan and then sauté the veggies and them mixed the sot sauce, Orange Marmalade and corn starch in a bowl. After the veggies have soften I add the chicken and sauce and let it thicken. One of my families Favorites!!! I also add any veggie I have that I want to use up. Enjoy!
