Grain-Free Baked Almond Chicken Fingers

Easy Baked Almond Meal Chicken Fingers
Crispy and easy to make chicken fingers that are grain-free and so delicious!
Ingredients
- 4 skinless boneless chicken breasts, sliced into chicken tenders
- 3/4 cup almond meal/flour
- 1 teaspoon ground paprika
- 1 teaspoon ground garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Preheat the oven to 350 degrees.

Using a small paper bag or Ziploc bag, shake seasoning and almond meal together. Place chicken tenders in bag and shake until well coated. I recommend only placing 1-2 chicken tenders at a time in bag.

Place the coated chicken on a greased baking sheet. For best results, use a metal cookie rack stacked on top of a cookie sheet to elevate chicken for even cooking.

Bake at 350 degrees for about 25-30 minutes until internal temperature reaches 165 degrees.

These sound fantastic, but for tonight I’m going to do the $5 Friday chicken at Safeway… 100° in California (no air conditioning) is just not the time to be turning the oven on. I’ll save the recipe! 😃
