Homemade Baked Broccoli Tots

Ingredients

  • 1 head broccoli (about 12 ounces) – diced
  • 1/4 cup onion – diced
  • 1 egg
  • 1/2 cup finely shredded Parmesan cheese
  • 1/3 Italian bread crumbs
  • 1/3 Panko bread crumbs
  • 1 teaspoon parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

Preheat oven to 400 degrees.

Bring a pot of water to boil on the stove.

Place head of broccoli in the pot for one minute to blanch. Rinse with cold water and drain well.

Dice onion and broccoli with a knife or in a food processor.

In a large mixing bowl, combine diced broccoli, onion, egg, Panko bread crumbs, cheese, and seasonings.

Spoon out a 1-1 1/2 tablespoons of mixture and shape tot in your hand. Place tots on a parchment paper lined baking tray. Or forgo rolling by hand and bake in a greased mini muffin pan to save on time.

Bake at 400 degrees for about 20-24 minutes until slightly brown. Makes about 20-22 tots.

      What about using a “flax egg?” You probably need something that will work as a binder.

      Flax Seed is a good egg substitute 1 tablespoon ground flaxseeds To replace one egg 3 tablespoons water.

      whole flaxseeds 1 tablespoon whole flaxseeds 4 tablespoons water

    My 19 y/o son hates broccoli in any form. We love to tease him & tell him we’re going to make broccoli cereal, cake, etc etc etc. (when my MIL was in rehab from a fall, she left some broccoli on her plate from lunch. I took a pic & we sent it to him letting him know it was saved for him 😝) I showed him the post &’said “look buddy- broccoli tots!” He just rolled his eyes. Sometimes humor can help. Maybe one day it’ll be his favorite!!

    This recipe called for way too much paprika and/or black pepper. I scaled back and only used 2/3 tsp of each, and it still was spicy, even for me (and I like spicy food). My toddler wouldn’t touch it. If I was making this, I’d cut the paprika and black pepper to maybe 1/4 tsp each.

    Are those bread crumb measurements in cups?
    The ingredients list both Italian and panko crumbs, the directions only say to add Panko, the photo looks like it only has Italian ones. What is the recipe???

      Sorry! We will fix this recipe. Measurements are in cups and add in both types of bread crumbs at once.
