Homemade Vanilla Almond Granola
Making homemade granola can cut down on your grocery bill and also happens to be super easy! Plus, I love that you can control the amount of sugar added and can customize to your liking by adding in your favorite nuts, seeds and dried fruits. In addition to making a great cereal, granola can be added to yogurt and fresh fruit for a breakfast parfait and makes a great snack all on its own!
Homemade Vanilla Almond Granola
Make this easy recipe to create your own vanilla almond granola! This is a yummy and crunchy topping to yogurt, fruit salads and more!
Ingredients
- 3 cups Rolled Oats
- 1/2 teaspoon Cinnamon
- 2 Tablespoons Brown Sugar
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Salt
- 1/3 cup Honey
- 1/4 cup Coconut Oil
- 1/2 cup sliced Almonds
Directions
1
Preheat the oven to 325 degrees.
2
Mix oats, brown sugar, cinnamon and salt in a bowl and set aside.
3
In a separate bowl, mix coconut oil, honey, and vanilla.
4
Pour the liquid mixture over the oats mixture and mix until evenly coated. In a thin and even layer, spread out over a Silpat Non-Stick Baking Mat or a cookie sheet covered in parchment paper.
5
You may need to separate into two baking sheets to ensure oats toast evenly and get that crunchy texture.
6
Bake at 325 degrees for about 15-18 minutes or until golden brown.
7
Take out of oven, toss with nuts and/or dried fruit, and let cool. Texture will become crunchy as it cools. Store in airtight container.

This looks so good. I can’t wait to go to the store to get the ingredients.
Lina, can I use whole almonds? I have a gigantic bag of them.
Sure it would be easy to maybe run them through a food processor or chopper just so it’s easier to eat maybe?
For the coconut oil.. is it 1/4 cup measured (cooled) or melted?
Melted or very soft so it combines easily with honey. Thanks
I have all of these ingredients! *super excited to try this recipe, thank you.
breakfast parfait….we make them for dinner. The kids love to pile on the fruit and granola into large glasses. it is a perfect no cook, no oven dinner!
Looks so yummy! Linda, how long can you store this for?
Oops I meant Lina 🙂
Up to a couple weeks in an airtight container – thanks!
It won’t last that long! lol
Freezing granola keeps it crunchy and fresh indefinitely 🙂
Mmmm…looks good😀

Thanks. My family and I are in to CLEAN eating and have been wondering how to do this without sugar or much sweeteners. My pantry is looking amazing, like a health food store and I have lost over 30 lbs the last 7 months with the help of medicine and a clean diet where I also keep in mind the portions and calories =)
As soon as I saw this, I got up and made it! It took no time at all and was so delicious! I didn’t have rolled oats so I used quick oats and it worked just fine. I also subbed unsweetened shredded coconut for the almonds because I didn’t have any. I can see adding cocoa powder and making chocolate granola! Thanks so much for this quick and adaptable recipe! I will never need to buy cereal again!
My husband is allergic to coconut oil. Is there something I can substitute the coconut oil with? Thanks!
I use butter when I make granola.
Just making this and yummo! Thanks! I used canola oil because I was out of coconut
