Homemade Veggie Fried Rice

Ingredients

  • 3 cups cooked brown rice (I used quick-cooking rice)
  • 2 and 1/2 cups chopped veggies (I used a mix of red onion, shredded carrots, edamame, corn & peas)
  • 1 clove minced garlic
  • pinch of ground ginger
  • pinch of red pepper flakes
  • 3 tablespoons canola oil
  • 2 eggs plus 1/8 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon of sesame oil

Directions

Heat oil in your largest skillet on medium-high heat and cook/brown eggs on both sides with a little sesame oil (cook eggs more like a well-done pancake as opposed to scrambled eggs). Move cooked eggs to a cutting board, chop, and set aside.

Heat canola oil in the pan and add onions, garlic, carrots, ginger, and red pepper flakes. After a couple of minutes, add rice, chopped eggs, and remaining veggies to the pan. Let fry a couple of minutes and stir occasionally. Then add soy sauce and sesame oil. Enjoy!

Hip Tip: Cold rice from the night before is a little drier and works great for stir fry. Next time you cook rice, cook a large batch and consider freezing the extras for future batches of fried rice.

    I LOVE making my own fried rice at home! So easy. I like to add shrimp to mine sometimes. Amps up the protein! And there are so many combinations to try–mine always comes out different depending in what I throw in!

    Follow the tip. Cold rice is best, otherwise it is super sticky! Been making homemade fried rice for years & love it!

      I agree! I cook my rice 2 days ahead of time and refrigerate it, uncovered. The drier the rice, the better! I also use fish sauce and no sesame oil because I enjoy Thai fried rice over regular fried rice. We love this dish so much that I invested in a nice wok!

    I make something similar to this on days where there just isn’t a lot of time to prepare dinner. While the rice is cooking in the rice cooker, I sautee a bag of frozen veggies in coconut oil (it’s the only oil we use for cooking, but you could use whatever oil you want). Then mix it together with a couple tablespoons of soy sauce.
    I love easy, quick, nutritious meals.

    Also try cauliflower rice instead of rice just as delicious but better for you.

    We love fried rice! It’s a breakfast favorite for us. We usually put eggs and sausages with it. Best way to reheat rice the next day is to wet a paper towel, place on top of rice and heat in microwave. No more hard or dry rice!

    Great recipe! I like to add 1/4 tsp of Chinese 5-spice to my fried rice.

    If you love garlic like I do, put lots of it, maybe 3-4 cloves. Minced it, saute it and add a little salt until brown. Then add the rest of the ingredients. Then you have garlic fried rice! The more garlic, the better!
    You can also use leftover rotisserie chicken, beef or pork, and you’ve got a complete meal.

    Great recipe to use leftovers in. LOL I have about 2 tenders left from last night I can put them in this instead of feeding them to the dog. Love it. I love recipes that use leftovers.

    i eat rice everyday in different forms.

    1. plain white/brown rice with lentil soups and lots of vegetables.
    2.when cooking rice add a pinch of salt and 1/2 table spoon of oil (any oil) so that the rice doesn’t stick and we don’t have to keep in fridge.
    3.today i made fried rice in instant pot..easy peasy . add 1 tbsp oil….add frozen vege , little saute it and add whatever you want to it like red chillies or pepper, salt add one cup rice (which is just washed not cooked), for 1 cup of rice i add 1/2 cup of water, close the instant pot. keep for 3 or 4 mnts in high….that’s it …i eat them with homemade yogurt…. you can cook all this in pan too.
    4. you can add coconut milk when rice in cooking it tastes so rich
    5. left over rice….dont feel like eating rice again…..mash it little make it little liquid… add salt, pepper and any vegetable….eat it like vegetable pancake…..etc etc.
