Low Carb & Keto Lunch Idea: Shrimp and Avocado Salad
Eating Keto or low carb and need lunch ideas?
If so, check out this healthy Shrimp and Avocado salad that’s anything but boring! The fresh lime and cilantro dressing makes it super flavorful and delicious. If you have the time, marinate the shrimp and veggies ahead of time with the dressing for maximum flavor.
I love salads for lunch because they are easy to customize with desired veggies and add ins. This simple dressing is very yummy and can also be customized by seasoning to taste. Next time I may add some cumin or Sriracha for spice! Yum.
Keto Shrimp and Avocado Salad
yield: 4 SERVINGS
Whip up this delicious shrimp salad with zesty lime dressing for a quick and easy Keto approved lunch idea!
Ingredients
For Salad:
- 1 lb. shrimp, cooked, (de-veined & tails off)
- 2 ripe avocados
- 4 cups lettuce of choice, chopped
- 1 cucumber, chopped
- 5 radishes, sliced
For Dressing:
- 2 tablespoons olive oil
- 3 tablespoons lime juice
- 1/2 cup fresh cilantro, chopped
- 1/2 teaspoon Dijon mustard
- salt & pepper to taste
- pinch of red pepper flakes
Directions

Drain any excess water from shrimp.

Mix shrimp, radish, avocado, and cucumber into a bowl, set aside.

In a separate small dish, whisk together all dressing ingredients.

If you have time, marinate shrimp mixture for about an hour in the fridge with dressing.

Toss shrimp mixture and any extra dressing with lettuce, and serve.

Such an easy and satisfying meal idea that’s yummy even if you’re not eating low carb! This would be a great lunch idea to prep ahead and take to work during the week. If so, consider separating the marinated veggies/shrimp mixture and lettuce so the salad lasts longer.
I’m not on this diet, but I would totally eat that! Yum!

Maybe try Jicama or Kohlrabi, they both have the same sort of crunch without the heat.

I’m not on the keto diet either but I do try to reduce the carbs either way, I think the idea of adding the cucumber and red onions would be a great addition to this salad because I don’t do radishes, I keep avocado and red onions as a staple in my house, I basically have everything already except the lettuce, I plan on giving this a try this weekend
You should try radishes cooked in a roast or stew. They aren’t hot and they make a great replacement for potatoes. I was pleasantly surprised.
Also tasty when sliced thin an stir-fried in butter

There’s a Recipe Nutrition Calculator on the MyFitnessPal web site https://www.myfitnesspal.com/recipe/calculator. I don’t think this function is available in the app. You could also try searching Recipe Nutrition Analyzer or Recipe Calorie Calculator to find other sites that may be useful.
I entered it in MyFitnessPal under recipes as Keto Shrimp and Avocado Salad – Hip2Save. I’m not sure if its publicly accessible. FYI: The recipe clocks in at around 267 calories if MyFitnessPal’s calculations are correct.
