Mini Corn Dog Muffins Recipe
If you love the taste of corn dogs, you are going to love this easy baked homemade recipe for mini corn dog muffins! These corn dog muffins are a crowd pleaser especially with kids and make a great football watching snack for the big game coming up!
Mini Corn Dog Muffins
yield: 8 SERVINGS
Ingredients
- 1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce)
- 1/2 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 8-10 all-beef hot dogs, cut into 1″ bites (Pictured are Open Nature brand nitrate free all beef hot dogs)
Directions

Preheat the Oven to 375 degrees

Wisk together butter and sugar

Add eggs and stir well, Add buttermilk and continue to wisk together

In a separate bowl, combine baking soda, cornmeal, flour, and salt, and stir to combine

Whisk into wet ingredients in two batches

Spray a mini muffin tin with non-stick spray

And spoon 1 Tablespoon of batter into each mini muffin cup, Place one hot dog bite into the middle of each muffin cup

Bake for 8-12 minutes at 375 degrees or until cornbread is golden brown

Cool in mini muffin tin for 5 minutes before serving. Makes around 36 mini muffins

My kids were seriously impressed with these! In fact I heard “This is the best thing ever, Mom.” 🙂 If you happen to have any left over, they do well reheated and are still yummy. Enjoy!

I have made this for years! But since little kids choke very easily on hot dogs, I chop my them or smokey links into a lot smaller pieces and put it in the mix. Can’t take any chances! There was a 7 year old that choked at school here a few weeks ago on a hot dog:(
Too true and just yesterday I experienced this for the first time with my little one it was like the casing was extra thick/tough in a two inch round surface area and that’s what he started choking on. But I always watch them when they eat because you just never know.
Funny I have lil smokies defrosting to make this tonight. Will have to try this recipe next time.
I need to find good quality hot dogs the best we have locally are the “naturals” from ball park. Really wishing we had a whole foods or trader joes… Or any health/specialty foods store for that matter.

Could you just make these using jiffy cornbread mix to make it even easier?
Yes! I have done that in the past but I don’t think it makes as many.
I made these before and it was a disaster for me I will use the jiffy mix next time, I don’t mind not having a lot to go around, it’s just me and my 2 kids that will be eating them, my hubby won’t like them I don’t think
I made these at Super Bowl last year and the kids loved them. I used Jiffy because I’m all about making it simple and I always have Jiffy and hot dogs!
Yes! I use Jiffy all the time. I also throw in some ground flax seeds and baby spinach (that I put through the food processor first). I’m betting that the homemade method turns out tastier so I’m going to try this recipe this week to compare.

Any cheap prices on a mini muffin pan?
I just picked one up for about $6 at Walmart
So me and the kids were making this today and my son actually asked me “why do we have to put hot dogs inside?!” I couldn’t believe my ears. I thought every kid was a hot dog lover!
Not a fan of hot dogs personally, but my kids would like these. I’m a huge fan though of Iowa Girl Eats. Have made several of her recipes & all have been fantastic. I recommend trying her chicken tacos (crock pot) and Mexican rice. A staple around here.
I am not a big hot dog lover either but I don’t mind them in small amounts like these, I also use Jiffy mix, its fast and easy and tastes delicious!!
