Pressure Cooker Potato Salad Recipe for your Instant Pot
Check out this EASY way to make potato salad!
This delicious pressure cooker potato salad recipe is creamy, delicious, and so simple to make! The potatoes are perfectly steamed and not mushy! Kick-off the summer BBQ season and save time by steaming the potatoes and eggs together in just 4 minutes! I am a little picky when it comes to homemade potato salad, and this method worked brilliantly.
Have a pressure cooker?
I’ve been using my 6-Quart Instant Pot Pressure Cooker quite frequently, and this potato salad is an excellent way to make use of it! The potatoes come out steamed to perfection without being mushy, and the eggs turn out great, too!
Potato Salad in a Pressure Cooker
yield: 8 SERVINGS
Ingredients
- 2.5 pounds red potatoes, peeled & cubed (or russet potatoes if you prefer)
- 1 1/2 cups water
- 4 large eggs
- 3/4 cup real mayonnaise
- 1/4 cup sour cream
- 1 tablespoon mustard
- 1 tablespoon dill pickle juice
- 2 ribs celery, chopped
- 1/2 onion, chopped
- 2 tablespoons fresh chopped dill (optional but yummy!)
- salt & pepper to taste
Directions

Place the steamer basket inside the pressure cooker and add water, potatoes, and then eggs.

Set pressure cooker for 4 minutes on high pressure. (If you own an Instant Pot like me, just press the manual button and then set time to 4 minutes.)

Do a quick release on pressure cooker and remove potatoes and eggs and let cool.

Make a dressing of mayo, mustard, sour cream, dill pickle juice, fresh dill, salt, and pepper.

Peel and chop eggs.

Mix celery, onion, potatoes, chopped egg, and dressing in a large bowl.

Garnish with a little paprika and more fresh dill if desired.

Chill for an hour or two before serving.

Don’t have a pressure cooker? Just cook your potatoes and eggs separately on the stove, and follow the recipe for the dressing.

Okay! You could also just boil potatoes and cook eggs like a normal potato salad then proceed with recipe 😀

have you tried German Potato Salad in your slow cooker? It is so delicious! It is a hot dish, but an awesome side dish anytime of the year. I think I just talked myself into making it tomorrow

Yes correct- you just place them on top of the raw cubed potatoes, then steam

Just rinse your eggs with white vinegar then rinse with cold water before you add to pot. This should stop contamination issues..
Unless you really clean your raw egg shells, your contaminating your potatoes. They do not clean the shells that well.
Wonder if we could put the eggs in a separate container in the pot? To prevent contaminating the potatoes. Maybe a small metal container or a glass bowl. Do you think this would work?
Yes, I’ve seen recipes where they open the eggs into a bowl and cook with the potatoes. Then you don’t need to peel them afterwards
I have to admit to not even thinking of washing my eggs first as I’ve made this recipe twice. Would it be possible that the heat of the cooker would kill anything bad?
If you are in the US and buying your eggs in a grocery store then they are required by law to sanitize the eggs. If you buy from a farm they may be morexlax, but your health department would probably like to know if you can physically see “dirt” on them.
egg shells are dirty even if grocery purchased. 7000 pores on an egg shell. Wash your eggs. Shouldn’t even crack on side of a bowl
Raw egg shells do carry bacteria, but so does raw meat, and we count on the Instant Pot to kill those germs via cooking, right? I would wash the eggs, but if it gets hot enough in there to cook potatoes AND hard boil eggs in 4 minutes, then I would feel comfortable that any microscopic egg shell bacteria would be rendered harmless too.

Can this be done in a regular pressure cooker, instead of an instant pot?

I cook in a pressure cooker and can in a large pressure canner. I would be afraid the stuff would be over cooked as it takes awhile for a regular pressure cooker to build up steam and seal and then awhile to cool down. I would call the company that makes the cooker you want to use first. Eggs tend to blow up with too much heat or pressure. just a thought…
Run cold water over your pressure cooker when you take it off the stove. The pressure will drop fairly quickly and your food won’t overcook.
That is just what my Mom used to do with her ancient pressure cooker! Nice to see this tip again.

It has taken me 46 years to work up the nerve, I remember a top blowing off of my grandma’s pot & bouncing off the ceiling! I’m determined to make some preserves & ribs, etc.. My Kambrook pressure cooker doesn’t come with a steamer basket – has a non stick inner pot- can I use a small trivet/steamer basket with it?

How about using tin foil?
Put some of your normal potato salad flavors in the water to flavor your potatos as they steam
I used vinegar, sugar, salad supreme, salt, and pepper. Had some trouble with the pot though….My Instant pot came up to pressure, cooked required time but when I did the quick release, there was an unusually small release. As expected, the potatoes weren’t done. Did it again for 2 minutes, same thing. Did it AGAIN for 4 minutes-had good pressure release and OVERDONE potatoes! Oh well, nothing is foolproof!

I have the Pressure Cooker XL (8 qt) but it didn’t come with a steamer basket, can this be made without one?
I used the fry basket out of my deep fryer it worked really well.
I just made this recipe tonight with my 8 qt. instant Pot. I did not have the steam basket, so I just put the potatoes in with the water and eggs. It all came out perfectly. I cannot wait to try the potato salad tomorrow with cheeseburgers on the grill!

First time using my new pressure cooker today with this recipe. Fantastic results. Almost too easy. I didn’t have a steam basket with my cooker so I used my regular steam basket in it and it was perfect. The eggs were the big surprise, the were perfect too!

Why do you have to use the steamer…..will they get mushy if you dont?
Vickie G…I just used the rack that comes with the pan as I couldn’t find my steamer basket anywhere. It worked fine. I just lifted rack out after and dumped potatoes into my strainer. I had a few fall back into pan but no biggie…just scooped them out.
Unbelievably easy to make! We aren’t fans of mustard in our potato salad so I just lessened it a bit. I also added chopped pimentos. It was soooo good. I mixed everything in the Instant pot (Insert pan) so I had only one pan to clean at end. No mess on my stove either from boiling potatoes and eggs. LOVE my Instant Pot and thank you for the recipe!!!
Most recipes say 6 min for hard boiled. They were done? Also were potatoes mushy or still together?

Maya, I used less sour cream & just replaced the rest with Hellman’s Mayo. It was great. (I’m thinking mayo might be dairy??) I’ll eat your share of the celery! 🙂

Laura, just add extra Hellman’s. It turns out great. It’s an easy recipe and the eggs and potatoes cooked perfect.
What about using avocado instead of sour cream?
Traditional potato salad is made with just mayo. Some recipes have mayo and mustard, some have mayo and sour cream. You should get a yummy potato salad with just mayo!

You can go ahead and crack the eggs and put in with the potatoes…cooks and no peeling the eggs! I’ll never “boil” eggs again!
How do u set on high pressure for 4 minutes on xl pressure cooker?
Made this yesterday….it was so easy….even easier because i didnt peel my potatoes. And it was delicious! Way better than any store bought potatoe salad where the potatoes are always hard! Loved this & will definitely be making again!

I’ve only had my IP for several weeks and have just started getting comfortable with it. The biggest trick was remembering to set the valve to seal instead of vent. Yesterday I tried your potato salad – it simply doesn’t come any easier, right? Even when I sat down to look through Pinterest “for five minutes” and lost track of time. My quick release turned into normal release and 24 minutes later I remembered the potatoes. I thought I would have soup but was so surprised by the potatoes being still usable, not as firm as I would have liked but still very usable for the salad. The eggs on the other hand……while they still tasted fine, they didn’t look fine. I set them aside for egg salad and cooked new eggs for the potato salad. I have friends visiting that I haven’t seen in many years and will be happy to serve this to them….I loved it!

If I use half the eggs and half the potatoes would I also need to half the amount of water? Would half the water be enough to run a 6qt instant pot? I’m the only one who eats potato salad in my house so it’s just too big of a batch.
I would still use that amount of water to build pressure. Just set potatoes on your trivet so it’d be easy to drain if needed. Enjoy!
What if you don’t have a steamer basket?
You can still make it. If it’s a bit watery after just use a colander to drain.
Has anyone tried to double this with 5lbs potatoes? Do you need to double water or adjust cook time?

This is my go to potato salad recipe. It use to be that if someone asked you to bring potato salad to a pot luck you felt you got the worst possible option because of all the time involved. Not anymore! Now I’m happy to bring it!

This is great. I have a regular pressure cooker and the process outlined here works. I put the potatoes in the basket and seal the pot. Put on the heat and when your pressure cooker reaches max pressure start the timer. 4 minutes is perfect. When the 4 minutes are up do a quick release and your potatoes are done. Eggs too! No explosions.

Didn’t work. I have the Duo Instant Pot and I don’t know how you must have got it done but my potatoes were hard and the gag runny and I didn’t make nearly as much as you did. Only 1 egg and probably not quite 2 lbs of potatoes. Followed your instruction. 😫

I just tried your potato salad recipe in my new 8 qt. Instant Pot. The potatoes and eggs came out perfectly. I will just add a note saying to be sure to remove the eggs from the potatoes and take the potatoes out of the steamer basket to cool or your potatoes stick to the egg shells and the steamer basket!

I followed this recipe for making the potatoes and boiled eggs and then used my own favorite dressing recipe. I used Yukon gold potatoes. The potatoes and eggs were cooked perfectly! So easy……thank you for sharing.

I love making potato salad this way now! My husband especially likes as he receives potato sale more frequently, lol. I don’t follow the dressing recipe exactly, just use my mom’ s recipe for that.

I still have my grandmothers pressure cooker. I can try this recipe in that. She used to cook everything in her pressure cooker. Started it and then finished it normally. the meat was so tender it was amazing.
This is pretty close to the recipe I use for potato salad and it’s so yummy. I also add shredded carrots to mine and I love that addition. I’ve also always just added the eggs to the potatoes when I boil them but I’m game to try this method. Plenty of time on my hands now that we are isolating…

I’ve had a lot of bags of potatoes go bad because it took too much work cooking potatoes for a potato salad. Mainly having to peel the potatoes while they were not quite cooled down. A recipe I use has many (after cooking) stages in the prep. Peeling and cutting the potatoes ahead of time would be great.
