No-Bake Pumpkin Oatmeal Energy Bites

Ingredients

  • 1 and 1/2 cups rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup mini chocolate chips
  • 1/3 cup honey
  • 1/4 cup ground flaxseed
  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice

Directions

In a large bowl, mix all ingredients together well.

Roll out teaspoon-sized balls and place on a baking sheet covered with parchment paper.

Freeze until set (about one hour).

Enjoy and keep leftovers in a Ziploc bag or a covered container in fridge or freezer.

Our Oatmeal Energy Bites have been one of the most popular recipes we’ve shared here at Hip2Save, and the pumpkin version does not disappoint!

Mix ingredients, roll into balls, and place in the freezer until they set-up!

Not only are they tasty, but these energy bites are also super easy to mix together, and there’s no baking involved! These Pumpkin Oatmeal Energy Bites add a touch of fall, with pumpkin puree and pumpkin pie spice blended into chocolate chips and oatmeal. They are so YUMMY and fun to make.

You can definitely alter these simple ingredients to include add-ins of your choice. For instance, you can delete the chocolate chips and add in coconut, or even some chopped nuts would be great! Use a favorite nut butter, and you can either use quick oats or regular rolled oats.

    I was wondering if you can use canned pumpkin without all the sugar and stuff or if you need to use the pumpkin pie filling? Also if you can recommend a good brand that has the fewest ingredients I would appreciate it! I rarely cook with pumpkin from a can since it intimidates me a bit, but I love anything pumpkin flavored for the fall, so I am eager to try some of your pumpkin recipes. thanks!

      In this recipe I’m using Libby’s pumpkin purée, not pumpkin pie filling. That’s usually what brand I use and find that honey sweetens it enough with the pumpkin pie spice. Hope that helps! 😀

    I don’t use canned pumpkin, I grow squash and pumpkins and they are interchangeable. You can use squash in place of pumpkin. Give the recipes a try, you can’t mess it up. And using honey is soooo much better then sugar. I have some chia seeds that I think I’ll use.
    Thanks so much for the recipes, I have a ton of squash and pumpkins to use.

      If you have an app like Senza or something you log your macros into you can put recipe in there as your own and it will figure that info for you.
