Pumpkin Pie Overnight Oatmeal
If you’re a fan of overnight oatmeal, then you have to try this healthy pumpkin pie version!
It’s such a delicious make ahead breakfast idea that’s perfect for Fall, and only takes a few minutes to prepare! Plus, it’s a nice way to utilize an open can of pumpkin puree if you happen to have some leftover from another recipe.
What is Overnight Oatmeal?
Overnight oatmeal is a way to prepare oatmeal by first combining it with milk then storing it in the fridge overnight. By morning the texture is smooth and creamy and makes for a great grab and go breakfast. It’s meant to be eaten cold, and my family LOVES it! Adding Chia Seeds provides even more nutritional value such as extra fiber and antioxidants.

Looks soo yummy. Thanks !
What about using instant oatmeal and warming up in am? Would that work?
Ya I would say that would work too! Sounds good π
Was also wondering how long would this last in the fridge ?? I would like to make them on my “meals for the week day ” TIA
I’ve only personally done 3 days ahead and it was still great! π Maybe other readers can help out too.
I usually make 5 overnight oats on Sunday and they still taste great on Friday. I also heat mine up, as I prefer it warm
That’s great to hear! Thanks π
Could you use regular milk?
Yes and also yogurt is great too.
Anyone doing Ww Smart Points know how many this would be? Starting next week. π¬
5 we smart points, minus the pecans. Not sure of the points with the pecans added.
2 points on WW purple.
**without the pecans. 1 Tb chopped pecans adds 2 points.
I’m so excited to try this!! Thank you!! We only have quick oats… Does that work?
I read somewhere that quick oats only takes about 30 minutes to get to the same consistency as old fashioned. So overnight may be too much? Maybe another reader has tried and can tell us. π
It’s much better with real oats (old fashioned). Bob’s Red Mill or Whole Foods oats are great — you get a hearty texture. Quick oats will get pretty soggy.
Flax meal and dried cranberries would be another good addition
Do you eat this cold (straight from the fridge)? This sounds so yummy but I definitely prefer my oatmeal warm π
Yes! I know it sounds odd, but yummy. If you prefer of course you could just warm up π
I love to add a scoop of vanilla protein powder to our oats, too!
Great idea! Thanks Sarah π
Thank you for all the great ideas! Going to give it a whirl to have for breakfast tomorrow. Sounds SUPER tasty!!
Sure! Enjoy π
I hope steel cut oats is an ok substitute
As a gastric bypass person (10 years out), I would love to know how many grams of sugar are in this? It seems really high in sugar/carbohydrates. Anyone?
The only sugar youβre getting is from the tsp. Of syrup. Which you can get stevia based syrups.
Colin – can you repost this? We tried a different recipe which did not turn out so great so we would like to try yours, please π
Where did the recipe go π©π©
Thanks Courtney, we fixed it!
Yayayyay thank you! It is such a yummy recipe!
