Ingredients

  • 1/3 Cup Almond Milk
  • 1/3 Cup Old Fashioned Oats
  • 1/4 Cup Pure Pumpkin Puree
  • 1 Tsp. Chia Seeds
  • 1 Tsp. Pure Maple Syrup
  • 1/2 Tsp. Pumpkin Pie Spice
  • Topping: Pecans

Directions

Combine all ingredients in a jar or container, close lid and place in the fridge overnight.

Enjoy in the morning with pecans.

If too thick, add additional liquid if desired.

If you’re a fan of overnight oatmeal, then you have to try this healthy pumpkin pie version!

It’s such a delicious make ahead breakfast idea that’s perfect for Fall, and only takes a few minutes to prepare! Plus, it’s a nice way to utilize an open can of pumpkin puree if you happen to have some leftover from another recipe.

What is Overnight Oatmeal?

Overnight oatmeal is a way to prepare oatmeal by first combining it with milk then storing it in the fridge overnight. By morning the texture is smooth and creamy and makes for a great grab and go breakfast. It’s meant to be eaten cold, and my family LOVES it! Adding Chia Seeds provides even more nutritional value such as extra fiber and antioxidants.

      I read somewhere that quick oats only takes about 30 minutes to get to the same consistency as old fashioned. So overnight may be too much? Maybe another reader has tried and can tell us. πŸ˜€

    It’s much better with real oats (old fashioned). Bob’s Red Mill or Whole Foods oats are great — you get a hearty texture. Quick oats will get pretty soggy.

    Flax meal and dried cranberries would be another good addition

    As a gastric bypass person (10 years out), I would love to know how many grams of sugar are in this? It seems really high in sugar/carbohydrates. Anyone?

      The only sugar you’re getting is from the tsp. Of syrup. Which you can get stevia based syrups.
