Garlic Parmesan Instant Pot Mashed Potatoes

Ingredients

  • 3 pounds red potatoes
  • 3 cloves garlic, mined
  • 1 cup water or chicken broth
  • 1/4 cup heavy cream
  • 3 tablespoons butter
  • 1/4 cup grated Parmesan Cheese
  • Salt & Pepper

Directions

Wash and cut potatoes into 2 inch pieces. Place potatoes into Instant Pot on top of trivet.

Pour in water or broth and add garlic. Close lid and move valve to "sealing".

Set cook time to 8 minutes on Manual (High).

Carefully vent pressure after timer goes off for a quick release.Β  (I use a silicone oven mitt, or the end of a spoon to turn valve.)

Drain excess liquid from potatoes.I used a colander.

Use a hand masher and mash potatoes with butter, cream, and Parmesan cheese

Add salt & pepper to taste.

Want to make delicious mashed potatoes in a snap? 🥔

Mashed potatoes are pretty easy to make, but the process can be a little annoying with boiling a large pot of water on the stove, etc.

One way to cut down on both time and effort, is to make them in your Instant Pot pressure cooker!  Just set the timer to cook, and then come back when it’s done to mash them right in the same pot. There’s no babysitting the stove, and the results are YUMMY!


My family prefers either red potatoes or Yukon golds, but feel free to use the type you would like. On this day we were in the mood for some garlic Parmesan potatoes so I’m sharing an easy recipe for those.

Note: I peeled off most of the potato skins because my kids are more likely to eat them without, but that’s a personal preference. If I was cooking for just me I’d leave them on, and make it even faster!

    I have cooked potatoes in the IP before and I have to say is wasn’t really faster than traditional ways BUT…. the potatoes were WAY better tasting. I made them for potato salad and the chunks were flavorful of the broth/seasonings I cooked them with all the way through.

    I miss my instant pot! Mine was damaged and instant refused to help without a receipt…which I understand but it was frustrating that they acknowledge the model number was made within the last six months…they advise me not to use it again because the sides were dented. Keep your receipts!

    I just got mine in the mail today and it seems overwhelming with all the different settings and options. Can you explain why you kit a trivet inside instead of just placing the potatoes on the bottom of the pot? What kind of trivet do you use?

      Placing the potatoes at the bottom of the pot would be similar to boiling the flavor out of them. The trivet is for steaming and pot-in-pot cooking. There are several reputable websites that detail the many ways to use the IP.

          Hippressurecooking is the one I see recommended most. I also like Pinterest, YouTube, and the IP reddit group. You can also look into renting cookbooks from your local library if you don’t want to make the financial commitment of purchasing some right off back. I’ve only had mine for about a month and I absolutely love it. It really does save time in the kitchen and allows you to multitask while the food is cooking.

      Oh I just used the metal one that came with my Pot so the liquid steams the potatoes. It seems overwhelming but I have only ever used the Manual button and warming/searing.

      You don’t need to use the trivet at all- I’ve had my IP for almost 2 years now and I never use it lol. I do 6 peeled, cubed potatoes with a cup of chicken broth, manual for about 10 min, QR (quick release), then mash and add in some cream and Kerrygold butter. You’re not boiling the flavor away because the potatoes obviously absorb the liquid that you add to them!

      Yes – this is how I made my sweet potatoes for Thanksgiving. They don’t need to be cut. Just steam them whole.

    Recipes – there are lots tried & true recipes on Facebook with emphasis on paleo, weight watchers, vegan, keto, meal prep etc.
    Instant Pots – people are finding them at thrift stores and salvage stores. Probably donated when they couldn’t figure out how to use. I plan to pick up an extra pot in Jan/Feb.

    I’m so bummed, spent $80 on a stainless steel pressure cooker 2 years ago, can’t afford to buy this appliance and then have another appliance to store. No one is going to want to buy a pressure cooker now that these are on the market.
