Red Velvet Box Cake Cookies Recipe
This yummy and easy red velvet box cake cookies recipe is easy to bake for your family! The powdered sugar gives them a pretty red crinkle cookie look, and they turn out so chewy and soft.
Hip Tip: For an equally delicious but different variation, use a lemon box cake mix instead of Red Velvet.
Red Velvet Box Cake Cookies
yield: 24 SERVINGS
Ingredients
- Red Velvet Box Cake Mix
- 2 eggs
- 6 tablespoon butter, melted
- 2 teaspoons lemon zest
- 3/4 cups powdered sugar
- 1 teaspoon cornstarch
Directions

Preheat the oven to 370 degrees, and place parchment paper over two cookie sheets.

Mix powdered sugar and corn starch together in a small bowl and set aside.

Beat the eggs, butter, and lemon rind together with a mixer first then mix in the box of cake mix.

Roll into one-inch balls and coat with the powdered sugar mixture.

Place balls on cookie sheet 2 inches apart.

Bake for 7-9 minutes and let cool on a cooling rack.

I’ve done this exact recipe but with Devils Food Cake mix, they are amazing! I never even thought to try red velvet cake! Perfect for X-mas! :o)

I have make these before in lemon, but I just mixed a lemon cake mix with a sm container of cool whip. Roll in powdered sugar and bake. Easy and oh so good!!
I have tried this too with devil food cake a couple of times, they were a hit when I took them to school too…. but they have too much transfat… better to make the cake mix at home.. after reading this I stopped buying the cake mix box all together….
I make red velvet cookie sandwiches using the cake mix & homemade frosting. Probably the easiest thing to make (well that & peppermint bark) and people rave about them.

I just made them without and they were still wonderful! I didn’t have it so just left it out.
Can you frost these cookies and omit the powdered sugar and corn starch?

The recipe on the cake box is different. 3 eggs not 2, and 1cp powdered sugar instead of 3/4. has anyone tried that? What’s the difference taste wise?
Did you try it with the 3 eggs because mine came out really dry with 2 eggs I even added white chocolate chips to half the battery. They were OK but not a hit in my home. Won’t make these again

First, let me say thank you for sharing this recipe! I substituted lemon extract for the fresh lemon rind but followed the recipe to a T otherwise and these turned out terrific!! It could easily become my go to recipe for get togethers, sweet treat, or indulgence! Yummy!!
I made these using a Duncan Hines cake mix because I had it on hand. The batter was really dry and some of the powder wasn’t mixed in, so I added 2 more Tbs of melted butter. The batter seemed ok, but when the cookies baked they must have absorbed all the powdered sugar! They still tasted great though! I’ll have to try these again with the right cake mix 😊
