Sausage, Green Beans, and Potatoes (My Fav $10 One-Pot Meal Idea!)

Simple, affordable dinner ideas that’ll feed a hungry crew on busy evenings are my favorite! If you need an easy meal to consider after all the busy holiday cooking over the last couple months, try this.
Get a warm and comforting meal on the table in a snap with this yummy sausage and potato dish. It has a buttery broth and the sausage itself seasons the potatoes and green beans nicely.
At around $10 for a large pot of food, this is a winning budget-friendly dish.
In fact, it’s one of my family’s favorites and it doesn’t take much effort at all. I feel like every family has their own variation of this simple meal and this one is ours! Feel free to use kielbasa as the sausage ingredient if you’d like.
You can prepare sausage, green beans, and potatoes inside a deep skillet with a lid on the stove or you can use a Dutch oven.
One-Pot Green Beans, Sausage, and Potatoes

A flavorful stew-like meal filled with sausage, fresh green beans, and potatoes.
Ingredients
- 3 tablespoons butter
- 1/2 a yellow onion, chopped
- 3 cloves garlic, minced
- 2 pounds red potatoes, chopped into 1 inch pieces
- 2 teaspoons Cajun seasoning, or to taste
- 1 pound fresh green beans, trimmed
- 12 oz. packaged smoked sausage or kielbasa, sliced
- 3/4 cup chicken broth
Directions

In a large pot on the stove, turn heat to medium and melt the butter. Sauté onions and garlic together until fragrant and translucent.

Place potatoes in the pot and stir all together with Cajun seasoning. You can also season with salt and pepper.

Add green beans and sliced sausage over top. Pour in the broth, cover the pot with the lid, and cook on low heat for about 30-40 minutes until the potatoes are fork-tender as desired. Stir well, and serve warm. Enjoy!
Tips for making green beans, sausage, and potatoes as a weeknight one pot meal:
- Season this meal as desired. The sausage adds lots of nice flavors, but you can turn it up a notch using garlic and Cajun seasoning like I did (or any other savory herb seasonings your family enjoys). It’s easy to adjust to taste.
- I’ve made sausage, green beans, and potatoes using the Instant Pot as well and it works great, too! Simply place all ingredients including 3/4 cup of chicken broth in the pot. Set the cooking time on HIGH or MANUAL for 3 minutes, followed by a quick release.
- Some readers have said they make this in a slow cooker! Try 6-8 hours on low until the potatoes are tender.
- Use the type of potato your family enjoys. I have used reds, russet, Yukon, and baby potatoes. They are all YUM!
- You can use canned green beans or fresh ones. If using canned, you would just need to throw them in at the end to warm up.

I thought the same thing, cbakerd3! Although I live in the South now, I was born in the Lehigh Valley and my family is Pennsylvania Dutch. “Ham and string beans” (as we call it) is something we always make with the leftover ham bone from a holiday meal. 🙂

you should try tossing the sliced sausages with green pepper and onion into the air fryer and in just a few minutes have a great, easy meal.

Thanks for the recipe! I have to commend you for giving a shout out to Louisiana Cajun seasoning, it’s the real deal. Seeing it actually made me smile. I live south of New Orleans and I can say I have tried every cajun seasoning there is and this one is our favorite. Not too spicy and not too salty-it’s perfect. It is made by cajuns and used by cajuns. I will try this quick one pot meal this week!

Lol! This has been a staple in our home forever. Except to make it a quick weekday meal we just cut up potatoes, throw two cans of green beans on it (juice and all), and dice up some kielbasa on top. Simple, quick, and kids love it.

Ya you can use another type of sausage. If it’s the uncooked kind, I’d cook it first though.

I have been making this for years & love it. Now I make it in the IP. Also a great way to use up leftover ham instead of sausage. I like to throw in some real bacon bits too for extra flavor. Serve it with a side of cornbread. Yum! 🙂

This dish was WONDERFUL!! I made it in my dutch oven……so easy!!! Consisted of small yellow potatoes, fresh green beans & cabbage…..and, sausage. There are only 2 of us, so had plenty left over for tomorrow night’s dinner!

Yes. I have done that in the past. Off the cuff I’d add maybe another cup of broth and do 4 or 5 minutes with everything in there on high.
