- Shred a store-bought rotisserie chicken as an easy shortcut for this recipe, or try using leftover chicken or turkey instead!
- Feel free to season your filling as desired, but I really love to use the savory seasoning blend Herbes de Provence for comforting chicken recipes like this one.
- I used a rimmed 16L X 12W X 1H sheet pan which worked out to be about the right size for this recipe, but I’m sure anything similar would be fine!
- Look for puff pastry sheets located by the frozen desserts in the freezer aisle at your grocery store.
Sheet Pan Chicken Pot Pie

Creamy shredded chicken and veggies get covered with flaky puff pastry for easy and delicious comfort food.
Ingredients
- 3 tablespoon butter
- 2 ribs celery, chopped
- 1/2 cup onion, chopped
- 1/3 cup flour
- 3 cups chicken broth
- 1 teaspoon Herbes de Provence seasoning
- 1/4 teaspoon salt & a few grinds of black pepper
- 2 and 1/2 cups cooked & shredded chicken
- 6 oz. frozen peas and carrots
- 17.3-ounce package puff pastry sheets
- 1 egg
Directions

Preheat oven to 400 degrees. In a large saucepan on the stove, melt butter and saute onions and celery for a few minutes until tender.

Whisk in flour and stir for a minute. Slowly whisk in chicken broth.

Season with Herbs de Provence, salt, and pepper. Let simmer while stirring often for about ten minutes so the mixture can thicken.

Stir in chicken, peas, and carrots. Pour the mixture onto a greased sheet pan.

On a cutting board, lay out sheets of pastry dough. Roll them out with a rolling pin a bit so they stretch to fit the sheet pan. Cut pastry into one-inch strips and place them on top of the sheet pan.
Note: I only used one sheet of pastry dough, so I'm saving the other sheet for next time!

Whisk the egg in a small dish and brush the tops of the pastry dough with egg wash.

Bake in the oven for about 30 minutes until the pastry dough is puffed and browned. Serve warm.

How would this work in a cake pan?
Cut the puff pastry to the same size as the pan you’re using (so cut it into a circle using the pan to trace the pastry dough), put the filling in, and poke some holes in the center for the pastry to release steam as it expands.
I think it’d still work great – just may have to use less puff pastry, since less surface area.

I have never cooked puff pastry. Could you also put a some on the bottom as a cust?
No, b/c it will get soggy and that won’t allow it to puff up. Puff pastry is best as a topper or to wrap around a filling.
So for this sheet pan idea I think it’d be too much crust to do that. Although I have never tried, I believe you can bake puff pastry first then place filling and bake top layer.
Can this be made with crescent dough
Yes I’m sure that could work also.
That’s what I do and it turns out great! I put the filling in a baking pan roughly the same size as a sheet of crescent roll dough, and bake it for about 20 minutes at whatever temperature the tube of dough called for. For what it’s worth I like a heartier filling, so I usually add a cup or two of frozen diced potatoes that have been thawed.

This was a huge hit at our house! Made this with leftover chicken. I used fresh carrots and cooked them with the celery and onion. The Herbes de Provence is the kicker here…perfect flavor! I made in a half sheet size plan. I may try a smaller size next time to make the filling a little more soupy. THANKS FOR SHARING!

Love it!!! We buy puff pastry all the time to make milhojas. Layers of puff pastry with dulce de leche in the middle. It only takes 10 minutes to cook and assambly and taste like a delicate french dessert.

Anyone in NYC do yourself a favor and to go Brooklyn Diner by Times Square. It is big enough for 2 people or if you have a fridge and microwave available get your own. Google the pictures.. words cannot describe how good the crust is.

Made this tonight. Next time I’ll use a bit more Herbs de Provence. I also will roll out the puff pastry – I didn’t do that this time. I made it in a casserole dish, and it was tasty. We had leftovers, so the pastry won’t be as good, but the flavor is good. I’ll make this again.

Quick freezer meal I make mine with leftover turkey from the holidays. Ok I’ll admit it I buy an extra turkey just to make pot pies. I put in aluminum pie plates put the top crust in the ziploc bag also. Defrost in frig the night before or that morning. Dinner time toss in the oven done in about 20 minutes always good I even like cold leftovers.

This was so good!!! I made a couple changes. 2.5 cups chicken broth and .5cup heavy cream, corn and used 1 roll of crescent rolls which covered it all. Used a large casserole dish instead of the sheet pan(mine looked nasty from years of baking). I swear, the herbs de province really gave it a great flavor!

Hi! I just made this! I didn’t read through all of the comments beforehand, forgive me, but did want to ask about the puff pastry. I had never used this before is it normal to have had the pastry brown on top and be kind of soggy underneath? I cooked it for 30 min. 😖
