My kids love pancakes for breakfast and even as a quick snack, too. I’m always looking for small ways to make my life easier, and baking them in a sheet pan is such a simple way to make a huge batch all at once!
The result is a sheet pan of beautifully baked pancakes you can cut into squares and serve with your favorite syrup. I’m calling that a major mom win! 🙌

Whether you’re having overnight guests or just prepping for a busy weekday, this recipe allows you to serve pancakes without hovering over the griddle. Just pop the pan into the oven and enjoy time with your family or get ready for the busy day ahead!
Even better, every pancake will be warm all at the same time! You can even divide the add-ins for two different tastes per sheet pan. This is perfect if your kids each prefer different kinds.

Sheet Pan Pancakes (Two Flavors)

Make fluffy pancakes using a sheet pan with these two delicious add-ins for a hands-off breakfast!
Ingredients
- 2 cups pancake mix (such as Bisquick)
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 banana, sliced thin
- 1/4 cup mini semi sweet chocolate chips
- 4-5 strawberries, sliced thin
- 1/4 cup blueberries
- powdered sugar (for dusting)
- pancake syrup (as desired)
Directions

Preheat oven to 425 degrees. Prep a 12x16 inch rimmed sheet pan with a sheet of parchment paper, and spray with non-stick oil.

To a mixing bowl, add pancake mix, milk, eggs, and vanilla extract. Whisk ingredients together until batter is smooth.

Pour batter onto a sheet pan and smooth out evenly until it covers the entire pan.

Top sheet pan with sliced banana and chocolate chips on one side, and berries on the other side. Bake for about 5-15 minutes or until the desired doneness. They should be slightly browned and cooking times will vary. Serve by cutting into squares.
Hip Tips for making the best Sheet Pan Pancakes:

- I used Bisquick as my pancake mix, but you can use a gluten-free or a homemade mix/recipe. If you’re eating low-carb, I highly recommend these keto pancakes!

- I use a 12×16 inch rimmed sheet pan, and it works great.

- Cover the bottom of the rimmed pan with parchment paper to prevent sticking. I recommend spraying the pan with non-stick oil before baking as well.

- Completely customize your add-ins according to your family’s preference. I made them the way my kids like their pancakes, but you can come up with your own creative flavors!

- If you have leftovers, you can warm them up in the microwave the next day. Easy peasy!

Either way would essentially work. Just may take longer if still frozen. My kids reheat pancakes in the air fryer – if you have one just a thought 🤗

SO easy! I used my own pancake recipe and did 1/2 cup whole wheat Flour with 1 1/2 cup white flour to make it a tiny bit more healthy. It cooked up in 5 minutes. My kids loved it!
Clean up was a breeze with the parchment paper!

Can frozen fruit be used successfully?

Yes I would think that could work as well.
I used frozen blue berries and did not thaw just added to top. FYI I preheated oven after I had pan ready so that may be a factor so they sat out a few minutes. Turned out great.
How the heck have i never heard or thought of this.so much more convenient and no hassle of waiting for each pancake to cook and flipping it like crazy then having most of the pancakes cold by the time all the batter is finished.

I was amazed at how well this recipe worked and how easy it was. I used a box mix so used 2 cups mix and 1 1/2 cup water as box said. I did not add any toppings. I spread mix on parchment paper with spray oil on top. It only took 5 minutes to fully cook. Then I cut pieces and used a cookie cutter on those. Sooo good. Thanks for this recipe

Can you use a mix that only requires water to mix with the pancake mix – like krusteaz pancake mix?
Yes! You can try using the mix you have in hand. Ahould be pretty similar. Just maybe watch at the end of bake time.

I saw a similar recipe on Taste of Home a few years ago. I’ve made it many times. That recipe called for more milk (1-3/4 cups milk to 2 cups pancake mix). It also had maple extract rather than vanilla. It is good and easy!
