Slow Cooker Veggie Lasagna Recipe
Did you know you can make lasagna in your slow cooker and it comes out fabulous!? And, I promise you won’t even miss the meat in this yummy vegetable lasagna. This dish has tons of flavor, simple ingredients, and it’s packed with fresh hearty veggies. This is a perfect meal for the summer if you want to avoid heating up your kitchen with the oven.
Slow Cooker Veggie Lasagna
yield: 8 SERVINGS
Ingredients
- 24 oz. jar plus one cup tomato pasta sauce
- 9 long lasagna noodles, uncooked
- 2 1/2 cups chopped veggies (I used mushrooms, onion, bell pepper, and spinach)
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 15 oz. container Ricotta cheese
- 1 1/2 cups shredded cheese - reserve 1/4 cup for very top (I used a mozzarella and parmesan mix)
- 1 egg
Directions
1
In a medium bowl, mix 1 and 1/4 cup shredded cheese, egg, and ricotta cheese. Reserve 1/4 cup of shredded cheese for the very top.
2
Sautee chopped veggies on the stove with olive oil and minced garlic for about 3-5 minutes. Add one jar plus 1 cup of your favorite pasta sauce with the veggies. Take off heat.
3
Spread about a fourth of the veggie sauce mixture on the bottom of slow cooker. Add 3 of the uncooked lasagna noodles, and break them apart to fit. Spoon on 1/2 of the ricotta cheese mixture. Layer more sauce, 3 more noodles broken to fit, the remainder of the ricotta cheese mixture, more sauce, 3 more noodles, the last of the sauce, and sprinkle 1/4 cup of cheese on the very top.
4
You should have a total of 4 layers of veggie sauce, 3 layers of noodles, and 2 layers of ricotta cheese mixture total.
5
Cook on LOW 4 to 5 hours (or on HIGH 2 to 3 hours) or until liquid is absorbed. If you opt to cook on high, watch the bottom carefully to ensure it doesn't burn - mine almost did at the 3 hour mark on high.
6
Garnish with fresh chopped parsley if you choose. Serves about 7-8 people.

Notes: I’ve made this meal a few times now and one jar of pasta sauce isn’t enough and one and a half is a little too saucy. My family absolutely loves this recipe! The veggies taste fantastic and it’s amazing how the noodles cook perfectly in the slow cooker! I love that you can use whatever combination of vegetables your family likes and that you have on hand. It makes great leftovers too. Enjoy!
Thank u Lina & Collin! Definitely going to try this recipe out with my new CrockPot from Sears! A steal at under $10 a few years ago…before my Hip-2-Save days. 🙂
Sure and thanks for reading Moni! Enjoy!
Thx .This looks easy & yummy.
I make this about 2x a month – works perfect
Fantastic! Thanks Sarah 👍🏻
This looks fabulous! We are not fans of ricotta and was wondering if anyone has tried it with all shredded cheese and had it turn out?
I haven’t tried all shredded cheese but I have used cottage cheese in a similar recipe and I liked that a lot
That’s a good idea. Thanks.
I tried this after it was posted last time and have made it several times. it’s been a hit! I actually prefer cooking it on high rather than low. I find it stays more moist. I also second that you need a little more sauce than the recipe calls for!
That’s great Nicole- Thanks so much for sharing!
We don’t eat egg. Is there any substitute for eggs? would love to try it …
I don’t like eggs either. Eggs are used as a binder…with all the cheese it will be good enough without it!
Thanks. My son is allergic to egg. Was wondering if I could do it without the eggs!
I got one of those 9×13 crock pots for Christmas….. This will be a great meal to use it for. Thank you
Enjoy Heather! Thanks for stopping by 😀

We had to give up meat about a year ago. My daughter is highly allergic to all meat protein. Like the other poster said, it’s been an adventure trying new recipes. Especially for my meat and potato husband.
What size slow cooker do you make it in?
I make a few different varieties in my six-quart slow cooker.
I think it’s a 6 quart. Oval
Thank you, Jennifer and Lina! I have a smaller one, so will have to adjust the ingredients. Looks delicious and I will be trying this recipe next weekend 🙂
I just finished making this & waiting for my 2.5 hr mark to check. Smells amazing already. Prepared everything together w/ my fiance as we have a cocktail 🙂 date night before our busy wk. I’ll keep you update of the taste, etc.
I made this dinner tonight and my family loved it! I even have a gluten allergy and used gluten free noodles and it turned out wonderfully! Thank you so much!
Wow! Great to know – thanks for sharing Stephanie! 😀
OH MY GOODNESS! I made this tonight and it came out fabulous! Absolutely delicious. I did put in a pound of browned ground turkey, as my husband loves meat. Used frozen spinach and made sure I removed all the excess water before placing it in the sauce. Couldn’t taste better! Thanks Lina!
Great news! Love when that happens. Thanks for sharing Karen-
