Tuna Ceviche (Whole30 Approved Lunch Recipe)

Tuna Ceviche

An easy healthy lunch recipe with tuna and fresh greens. Great low carb meal for busy weeknights. Adapted from Skinnytaste.com
Ingredients
- 7 oz. canned albacore tuna in water, drained
- 1/2 avocado, sliced
- Handful of small salad tomatoes, chopped
- 2 Tablespoons cilantro, chopped
- 2 Tablespoons purple onion, chopped
- 1 jalapeno, seeded, chopped
- Juice of one lime
- 1/2 teaspoon olive oil
- 1/8 teaspoon ground cumin
- Salt & pepper to taste
- Wrap in pieces of butter lettuce to serve
Directions

Chop and combine ingredients in a medium bowl.

Serve with lettuce pieces if desired.
This is a really yummy and easy lunch! I love the flavors. What a great way to jazz up a can of tuna! Not a tuna fan? Try shrimp instead! Enjoy!

I made something somewhat similar today but the main protein came from tofu…avocado, tofu, cucumber, mayonaisse, curry powder, cilantro, and a little bit of salt, pepper, and lime juice.

Great with chicken too………had a couple chicken breast left over. I cubed them up and it was yummy!
I make my tuna salad by adding it to my romaine fresh salad, onion slices, lots of lemon, some tomato, sea salt, olive oil, some vinegar, yum

Just wondering why my comment was deleted. I just pointed out that this is not true ceviche, which is typically made from raw meat.
Possibly because that comment started a long string of other comments making a big deal about the name, and it became really negative. There’s actually a perfectly innocent explinaton as to why it has this name. I explained it, but my comment was also deleted. It has to do with the fact that the person who created the original recipe was not trying to create a “true ceviche” but a quick and easy substitution with everyday ingredients you may have handy in your pantry.

I’m not on the Whole30 but this recipe looks so good and I have cans and cans of albacore in my cabinets, back in Dec CVS was having it on sale for anywhere from $.69-.89 a can and I would stock up, this recipe uses everything that I use on an everyday basis so nothing I have to go out and buy except for the butter lettuce which I have never tried but willing to give it a try, thanks for the recipe!!!

I’m not doing Whole30 but after seeing Collin’s post yesterday I’m definitely thinking it’s something that I should do. Thank you Lina for posting a Whole30 recipe and something that looks delicious. The guys that work for me always talk about how if it (food) tastes good then it’s not good for you, which I know is not true as there are plenty of good tasting foods that are good for you, but I’m glad to see something that looks delicious also be nutritious! Does this keep ok in the fridge? I’d love to bring it to work for lunch but would need to prepare either the night before or in the morning and I’m worried the avocado would brown….
That is what i was wondering to? i know if you put lime (and i have heard pam but have not tired this) on the avocado it wont brown ?
It didnt keep for me as well. But maybe prepare ahead and bring an avacado with you? Just a thought. Thanks!
I find that tossing avocado chunks with grated (or chopped) onions and a squirt or 2 of lime (or lemon) juice & olive oil, and sticking the seed in the middle keeps it from browning badly by lunch time. Another tip I read, but haven’t tried, is to use a very shallow bowl (like a rubbermaid container), cover with saran wrap then put the lid on top to keep the air out.
