Easy Weeknight Chicken Stir-Fry Recipe
This chicken stir-fry recipe is an easy and delicious weeknight dinner that’s done in minutes!
This weeknight chicken stir-fry recipe is one of my favorite go-to family meals because it’s simple, delicious, and completely customizable. You can easily adjust the ingredients to suit your family’s tastes, or just use whatever combo of meat and veggies you happen to have on hand at the moment!
Serve it on top of your favorite rice, and you’ve got a fast home-cooked meal. This is a great basic recipe that’s full of flavor and my entire family thinks that it tastes amazing!
Hip tips for making this easy chicken stir-fry recipe:

- Feel free to substitute the veggies for the ones that your family loves. It’s also a great opportunity to use up leftover veggies from your fridge.

- Use a stir-fry wok if you have one, but a large 12-inch skillet works too!

- At the very end of this recipe, I made a cornstarch slurry to thicken the sauce. It’s a small additional step, but it’s worth the little bit of extra effort. It adds a great “take out” style texture to the sauce and helps the sauce to better “stick” to your meat and veggies.
Weeknight Chicken Stir-Fry Recipe

Chicken and veggies get sautéed on the stove using ginger and other Asian-inspired flavors for a super easy and delicious skillet meal!
Ingredients
- 1 tablespoon coconut oil (or cooking oil of choice)
- 1 pound boneless skinless raw chicken breast, cut into 1-inch pieces
- 2 garlic cloves, minced
- 2 teaspoons ginger, minced
- 1 cup chicken broth, divided
- 3 tablespoons soy sauce
- 2 teaspoons sugar
- 2 cups veggies (I used broccoli, sugar snap peas, & bell peppers)
- 2 teaspoons cornstarch
- toasted sesame seeds (optional)
- 4 servings rice, cooked
Directions

Heat a large skillet or wok over medium-high heat on the stove.

Add chicken, garlic, and ginger to skillet.
Hip Tip: I like to keep small jars of minced garlic and ginger for those times I don't have fresh on hand.

Saute 5 to 6 minutes or until chicken is brown.

Add 3/4 cup of the broth, the soy sauce, and sugar.

Cover skillet with a lid and cook over medium heat for about 5 minutes, stirring twice. Add vegetables.

After adding the vegetables, cover and cook for about another 5 minutes, stirring occasionally, until chicken is no longer pink in center and veggies are crisp-tender.

Mix cornstarch with remaining 1/4 cup broth and then pour and stir into chicken mixture.

Cook while stirring frequently, until sauce is thickened.

Serve on top of rice and garnish with toasted sesame seeds if desired. Enjoy!

Not only can you customize the veggies, but you can choose your protein as well. Sometimes I change things up and add shrimp or steak instead of chicken. That’s always a big hit with my family, and it makes this recipe feel like a brand new dish every time. YUM!

It looks really delicious and I want to make it! However I’m going sugar free. I know it’s crazy but I want to do it. Anyone know what the best sugar substitute for this recipe or cooking in general is?
I think you’d be fine to just leave it out altogether. I make chicken stir fry frequently and never put sugar in mine.
Honey works good if you are OK with adding natural sugar.

A little bit of chopped or minced pineapple or swap a little fresh pineapple juice for the broth would work too. For this recipe, you could definitely do without any added sugar.
I sub in honey for half the amount of sugar. We also use coconut sugar occasionally, which is a great white sugar substitution. Finally, if you want to avoid any form of sugar, I’d use unrefined coconut oil for your cooking oil…it adds an almost sweet quality to stir fries without adding sugar. Not quite the same, but it does round out the flavors nicely.
Use honey
I’ve used Splenda in similar recipes with good results.

For an even faster version, I sometimes use frozen stir fry vegetables. I cook them for 2 minutes in the microwave and then drain the water from the bag. Otherwise the water from the vegs dilutes the seasoning. Thai (or sweet) chili sauce is delicious in this if you like things spicy.

Mt rice is always sticky any ideas? I go by the instructions.
Try Jusmine rice in the rice cooker (if you have one) 3 cup of rice 4 cups of water. Makes it perfect!
I rinse the rice twice before cooking. It takes some of the starch off.
I rinsed my rice 3 times and I used 1:1 ratio for jasmine rice and water. It turns out great and also I would let the rice sit in the rice cooker for a few minutes after it finishes cooking before you take it out.
2 cup jasmine rice , 3 cups water, 1 tiny piece of a cinnamon tick, a drop olive oil. Combine all in the rice cooker and you are going to have perfect rice. Whoever likes stickier rice, I would recommend medium grain pearl rice.

Pinned this, will definitely try it soon! Just a side note – you shouldnt use cooking spray in non-stick pans… reacts with the coating and makes an oily film that wont come off and may damage coating. I use just a little olive oil with all of my sauteed veggies. YUM!

Just made this last night. Really good! I chopped up everything and my 14 year old daughter cooked. She wants to learn. She added another teaspoon of cornstarch to thicken the sauce more.
I found this on Pinterest and made this tonight. I thought it was, by far, the best Asian inspired chicken I’ve ever made. Even my son, who have NEVER eaten any meat with a sauce on it, had 2 bowls. Unlike others here, I did not have a lot of broth left, so I added more. Only thing I’d do differently next time is to make 2 batches!
