7 Layer Tortilla Pie (Meatless Monday Recipe)
Fan of meatless family meals?
Sometimes it’s a struggle to figure out easy meals that everyone will enjoy and this one was a winner for my kids! Tortilla pie is a comforting dish to make any day of the week! Plus it’s an impressive dish that uses inexpensive pantry staples which result in a delicious Mexican-inspired dinner, with all the melted goodness everyone craves.
Easy to Customize For Your Hungry Crew
Add different varieties of beans depending on what you have on hand and consider throwing in canned corn, jalapeños, sour cream, black olives, and/or chopped green onions. Make it as spicy as you’d like and, of course, you can always add shredded chicken in case that’s what your family prefers!
7 Layer Tortilla Pie

total time: 40 MINUTES
Mexican dish layered pie recipe that is full of yummy ingredients for an easy weeknight dinner.
Ingredients
- 7 – 8 inch flour tortillas
- 1 – 15 oz. can pinto beans drained + 1/2 teaspoon cumin & 1/4 teaspoon chili powder
- 1 – 15 oz. can black beans, drained + 1/2 teaspoon cumin & 1/4 teaspoon chili powder
- 1 – 10 oz. can Ro-Tel diced tomatoes & green chilies
- 8 oz. package Mexican blend shredded cheese, divided (reserve half of cheese for top of pie and divide the rest to sprinkle on top of 4 individual layers of beans)
- 3/4 cup fresh guacamole (pictured is from Albertson’s deli)
Directions

Preheat the oven at 350 degrees.

Mash beans using a potato masher in two separate bowls, and mix with cumin and chili powder.

Place one tortilla in a lightly greased cake or pie pan. Spoon half can of Ro-Tel on first tortilla and spread. Top with second tortilla, and spread half of black beans mixture and sprinkle with cheese. Repeat process layering rest of beans and Ro-Tel.

You’ll end up with 2 layers of Ro-Tel, 2 layers pinto beans & cheese, and 2 layers black beans & cheese. Place final tortilla on top and sprinkle with the rest of shredded cheese.

Cover with foil and bake in the oven at 350 degrees for around 20 minutes. Uncover and bake for an additional 5-10 minutes until melted and bubbly. Spread guacamole on top and serve.
Mouthwatering Melted Pie Perfection!
This idea truly isn’t really tedious cooking per se, but instead compiling a last-minute dinner the family can dig into using what you most likely have on hand. Sort of an upgrade to melting a simple quesadilla! Enjoy!

Lol. My friend was a vegetarian in college so I told her I was gonna go on the meat meat diet. She didn’t laugh but my sister did. Who knew it already had a name- Adkins diet lol

Wholeheartedly agree. It’s sad that so few Catholics realize that we are still required to abstain from meat EVERY Friday or make an alternate sacrifice. During Lent, an alternative sacrifice cannot be made.

I know I was thinking some people who don’t like tomato diced, but do like it in purée salsa.
My kids will not touch a tomato or even anything with canned tomatoes, but they will devour a jar of salsa. It’s so strange.

That is me too! I will eat them in liquidy salsa, in ketchup, in tomato sauce, but keep me away from the chunks.

I think so! You could just later several smaller ones overlapping if they don’t make an 8 inch size. May not look the same but same idea!

Lina, last week I made your vegetarian crock pot lasagna. It was great. I was too lazy to saute the vegetables and just put them in raw and chopped–still delicious. Thanks so much. By the way, how do you think corn tortillas would do for this dish??
You could also add a meat substitute like Smart Grounds meatless crumbles to this and it would be fabulous. Just warm the “meat” for 4-5 minutes with the taco seasoning mixed in. My VERY picky teen gobbles it up and it’s excellent protein.
I love versatile recipes! At our house, we need recipes that can accommodate meat/no meat, gluten/no gluten, low dairy (and no tree nuts or peanuts) so this looks like I can figure out how to make it work. Thanks for all you do!
